We always enjoy cupcakes, however we don't always want ones with butter icing.
So I decided to make some mini versions of my crumble cakes. I have previously made both Rhubarb and Banana Crumble Cake and Lemon and Lime Crumble Cake as large cakes so this time I decided I would make some mini versions.
This is what I did...
Mixed Fruit Crumble Cakes
Ingredients
150g butter
150g caster sugar
3 eggs at room temperature
125g self raising flour
25g ground almonds
Mixed fruit jam
55g plain flour
30g butter, cubed
10g brown flour
10g caster sugar
20g muesli
10g chopped hazelnuts
Method
Pre heat the oven to 180C
1 - Mix together the butter and caster sugar until light and creamy
2 - Add the eggs one at a time with a little flour to prevent curdling
3 - Sift in the flour and add the ground almonds and mix until all of the ingredients are evenly combined
4 - To make the crumble rub the butter into the flour and sugars to make a bread crumb consistency
5 - Add in the muesli and hazelnuts
6 - Put about 1 dessert spoon of cake mixture into the bun cases
7 - Place half a teaspoon of jam in the centre of the cake mixture
8 - Sprinkle over the crumble mix
9 - Place in the centre of the pre heated oven and bake for about 20 minutes
These delicious buns are a great treat when still slightly warm. They can be enjoyed as they are of accompanied by a scoop of ice cream or whipped cream.

Weekly Meal Plan - Week Commencing 26th May 2014
Last weeks meal plan went completely out the window!
Last week I decided to cook as many vegetarian meals as possible as it was National Vegetarian week. I didn't say anything to my meat loving family as I knew what their reaction would be.
Out of the 5 week day meals, 4 were vegetarian!
I even cooked a spaghetti bolognese using a meat substitute which was eaten without question! I will definitely be keeping a bag in the freezer from now on for days when I have forgotten to take any meat out of the freezer or even as a cheap alternative!
The hubby has got a few days off this week and it is half term so I am planning this week's meals but they could change!

Garlic Chicken Kiev
This is an easy meal for today. I will serve with homemade chips and salad.
Moussaka
As we recently bought an Aubergine plant I bought some this week for the children to try. Moussaka is a great way for them to have their first taste and get lots of vegetables too!
Roasted Pork Shoulder
This is a meal which I meant to cook the other week. I always cook pork shoulder as a pulled pork meal so I thought I would try roasting one to see how it is. This is a really cheap joint of meat and I am hoping it'll be a great way to enjoy a roast dinner!
Rosemary and Garlic Chicken
This is chicken that has garlic butter and rosemary rubbed over the top then roasted. I will serve with new potatoes and either salad or vegetables.
Fish Pie
I love fish pie and we haven't had one in a while so when I go shopping I'll be buying some fish.
I haven't planned a meal for Saturday as they do have a tendency to change.

Center Parcs May Challenge - The Great Outdoors
May is the time of year when the majority of our time is spent outside.
As a family the place where we are at our happiest is in our garden. We spend a lot of time making the garden a safe and enjoyable place for the whole family. Another place that we love to visit is the local house and gardens. Each year we buy a years pass and this allows us endless visits to enjoy seeing the seasonal changes. This is a place that I remember visiting as a child and am now revisiting with my children and helping them to create the happy memories that I made there!
Center Parcs photographer has shared some great tips. The one tip that inspired me the most is:
"Take some springtime selfies of you and your family enjoying yourselves
on a walk in your local park."

19th May - 25th May 2014 - One Picture Everyday For One Year
This week has been another week full of outdoor time! It has been lovely.
However the rainy days have been challenging, but I am now on the look out for activities as I have found that the twins loved having something to focus on.
We have had hubby home a couple of days this week to start building the greenhouse. Joseph has also broken up from school for the half term holidays.
This is our week in pictures...
Monday was a glorious day! The twins enjoyed the garden and their water table in the sunshine. They also enjoyed their first ice pops!
Thursday was a complete wash out. It rained all day! After having lots of lovely outdoor play the twins were starting to go stir crazy being inside! This led to them getting into mischief and winding each other up. Which ultimately ended up in tears and tantrums! So to diffuse the situation we did some baking! I was making some cakes so I did a little extra mixture and gave them a bowl each. They loved it and now when mummy bakes they say "mix mix" to join in!

Tuesday 20th May 2014
Tuesday wasn't as hot but was still dry. We enjoyed yet more time in the garden. The twins are starting to get inquisitive around the flowers and Isabella is asking what they are called. She now knows Peony, Lupin and Lavender! They enjoyed taking some cauliflower leaves down to the chickens. They are getting a lot braver around them and happily sit pushing leaves through to the chickens to eat!
Wednesday 21st May 2014
The hubby took Wednesday off to start the building work on the greenhouse. This has been a project that he has been working on for weeks now. So he was so excited to get started. As it was yet another beautiful day we had lots of outdoor play and finished the day off with a family barbecue!

I have recently been wanting to experiment a little more with my bread baking. I love baking bread it has to be my favourite food to bake. I always enjoy the whole process of making it. This was my second attempt at a plait loaf which the hubby said was the best loaf that I have made! It was delicious, in fact I have another in the oven at the moment!

The new trampoline enclosure arrived. The old one had ripped so it wasn't safe for the twins to play on it. As soon as the hubby had replaced the netting the twins wanted to have a go. They loved it! I can see that from now on they will be wanting to "jump jump".
