Organix Goodies Giveaway!


In the past I have told you how much the kids love Organix snacks. They are a healthier option and us parents can be safe in the knowledge that they contain no nasties! Earlier in the year I told you all about their new snacks for older kids, Punk'd, today I am going back to snack for the younger ones.

Organix No Junk Campaign - Picnics

Earlier in the year I took the Organix No Junk challenge which you can read about here.

I am delighted to say that Organix are continuing their No Junk campaign throughout the year and I will be covering the topics in various blog posts and recipes. This is a campaign that I am passionate about. Since having children food has become a focal part of family life. Meal time is quality time that we all get together. I am a true believer in the saying "a family that eats together, stays together".

Summer time and holidays are the perfect time for picnics.

Not only are picnics a great way to enjoy the great outdoors, eating good food, it is also a fantastic way to save some valuable money!

At this time if years it is only fitting that the campaign focuses on picnics. As we are going away next week this has also been a huge point of my food planning whilst away. It will work out expensive if the 5 of us need to eat out everyday so we will be relying on picnics for lunch. As we will be away from home I will not be baking bread but will be buying freshly made bread as opposed to mass produced bread which contains many more ingredients than necessary. Our sandwich fillings will include cheese, meats and salads. While snacks will include crunchy veg sticks and breadsticks with dips. We all know that crisps go perfectly with picnics so we will be having traditional potato crisps and Organix snacks for the children.

Organix have a wide range of healthy snacks that are ideal to to take out on picnics.

Cheap Budget Meal - No Junk Chilli Enchiladas

As my regular readers will know, I took up Organix challenge of no junk for a week.

This challenge did make me check the ingredients a lot more foods, but as I already cook our meals from scratch I didn't really notice a difference in how I cook.

One meal that I have been planning to cook and never get round to is chilli con carne.

So this week I am making a basic chilli mix but instead of having it with rice, I am making enchiladas.

Enchiladas are tortilla wraps filled with chilli con carne, sprinkled with cheese and placed under the grill.

Making your chilli sauce is much easier than you may think. I used to use a packet mix until I decided to make my own one time and have never looked back. This saves me money as the spices and herbs that I use are part of my store cupboard essentials. But what is even better is that I know exactly what is going in and there is no added salt!

I make my own tortillas using just flour, a little salt and water. These are also very easy to make! I was amazed by how many ingredients are used to make shop bought tortilla wraps when they can be made so easy with just flour, salt and water!

This is my Cheap Budget Meal recipe this week...

No Junk Chilli Enchiladas

Ingredients

Chilli

400g lean minced beef (£2.50)
2 sml or 1 med red onion, chopped (19p)
1/2 red chilli, chopped (10p)
1 garlic clove, crushed (25p - full garlic)
1 carrot, grated (8p)
500g tomato passata (43p)
205g tin of kidney beans in chilli sauce (40p)
1/2tsp mild chilli powder
1/4tsp ground cumin
1/2tsp cinnamon
1/2tsp mixed spices
Mature cheddar cheese, grated (£1)

Wraps

100g strong wholemeal flour
150g plain white flour
3g salt
150mls water

Method

1 - Place the minced beef, onion, chilli, crushed garlic and carrot in a large pan and put on a medium heat. I have place all of these ingredients together so that the flavours are combined with the meat as it cooks.


2 - Once the meat has browned off add the kidney beans in chilli sauce and the tomato passata

3 - Mix until all of the ingredients and thoroughly combined

4 - Add the mixed herbs, chilli powder, cumin and cinnamon

5 - Bring to the oil then simmer for about 20 minutes or until the meat is thoroughly cooked

6 - To make the wraps place the flour, salt and water in a bowl and mix together with your hand

7 - Bring the dough together and knead for 5 minutes then leave for 10 minutes to rest


8 - I made 6 tortillas with this recipe, cut of pieces on dough and roll out into a thin circular shape

9 - Heat a non stick frying pan and then place the tortilla in the heat and bake for a few minutes on each side

10 - Take the cooked tortillas and place some of the chilli sauce along the centre and wrap, lay the wrap side down in either individual over proof dishes or all together in a large dish

11 - Once all of the tortillas have been filled and wrapped spoon over any remaining sauce and sprinkle with cheese

12 - Place under the rill to melt the cheese and serve

Enchiladas can be served with either a side dish of rice, nachos and salsa or as we had them, with a green salad.

This chilli is not too spicy so it perfect for a family meal and contains no junk, unknown foods!

I made this meal for £4.95, that is just 99p per serving!

Kedgeree Style Couscous

Don't you just hate it when you have a meal planned but when you go to prepare it you realise that the key ingredient is missing!

That's what happened here yesterday.

I went to make a kedgeree, went to the cupboard only to find that I had no rice!

Rice is the main ingredient!

However I did have couscous and came up with this delicious meal that I just had to share!

It also goes hand in hand with the No Junk challenge that I am taking part in. All of the ingredients are known and found in a household kitchen.

This is what I came up with...

Kedgeree Style Couscous

Ingredients

300g wholewheat couscous
1tsp turmeric
450mls boiling water
1 onion
1tsp medium curry powder
1/2tsp ground cumin
50g korma paste
1 tin of tuna
3 medium chestnut mushrooms
200mls double cream
2tbs rapeseed oil
Poached egg to serve

Method

1 - Place the couscous in a large bowl, mix the turmeric in with the boiling water and pour over the couscous, cover and leave on one side

2 - Heat the rapeseed oil in a large frying pan and add the onions, curry powder

3 - Once the onions have started to soften add the mushrooms, tuna, curry powder, ground cumin and korma paste and cook for 5 minutes on a medium heat

4 - Stir in the double cream and heat for a couple of minutes

5 - Turn the heat down and add the softened couscous and stir thoroughly

Serve with a poached egg on the top.

This is a delicious change to the traditional rice Kedgeree! It is such a quick, easy, family friendly meal which contains no junk!

Organix No Junk Challenge

Organix No Junk Challenge: Take the challenge, cut out the junk.


When I saw that Organix were running a challenge to cut out junk that we feed our children I knew that I had to take part.

I am a firm believer in cooking meals from scratch. They are not only healthier for the family but you know what ingredients are going into the meal. I always find it concerning when I look at an ingredients list and see items which I have never heard of. I don't know if they are chemicals, preservatives, artificial additives, sweeteners, they really could be anything! They are ingredients that are certainly not found in a home kitchen. I was amazed by the huge list of ingredients that are used to make mass produced shop bought bread. I make bread using just 4 ingredients plus water! I like to know what my family are eating and what I am feeding my children.

It is not always easy to check the ingredients as you are shopping. Any parent will agree, when you go shopping with the kiddies, you want to go in, get what you need and get out before they get bored! Looking at ingredients is only gong to make your trip longer. This is why the government and food industry need to have tighter regulations regarding added salt, sugar, fats and artificial additives.

I am going to be sharing some easy recipes which can be made at home from scratch and that will please the whole family! They will contain No Junk ingredients, easy step by step instructions and will not cost a fortune to make! So keep an eye out for some delicious recipes and take the pledge with Organix!
