This is a great easy meal for when time is an issue. It is so quick and easy, or as I would say "its easy peasy!"
You can also easily adapt this recipe to taste if you wish for example you could replace the smoked bacon with plain bacon.
Here is how I make it...
Ingredients
6 rashers of smoked bacon
1 red onion chopped
6 mushrooms sliced
Spaghetti
2 eggs
100ml Milk
100g Cheese
Half tspn black pepper
Method
1 - Cook the pasta according to the cooking directions
2 - While that is cooking cut your bacon up onto squares. I find it easier to use some clean kitchen scissors, it is so much quicker!
3 - Fry the bacon and onions in a little drop of olive oil
4 - Once it is starting to brown add the mushrooms and continue to cook on a medium heat
5 - Once the spaghetti is cooked drain and return to the pan
6 - Add the cooked bacon, onion and mushrooms
7 - Beat the eggs in a bowl and add the milk, grated cheese and the black pepper. The pepper sounds a lot but with the saltiness from the bacon it balances out the flavours
8 - Return the pan to a medium heat and add the egg mixture and stir into thhe spaghetti
9 - Cook for a further 5 minutes then serve!
Easy Peasy!
This meal is delicious as it is or with a scattering of grated chesse or parmesan on the top and with an serving of garlic bread.
