Using Leftover Easter Chocolates

I don't know about your house, but here, each and every year we end up with leftover chocolate from Easter. It is usually down to me to use them in bakes and desserts.

So when Aldi challenged me to come up with a way to use leftover chocolate, I knew it would be fun. Today I will be sharing my ideas for how to use up some chocolate decorating cakes. After reading this you will be looking for leftover chocolate to use!

This is a quick and easy cupcake recipe that is perfect for baking with little ones. Here is my trusted recipe...

Vanilla Cupcakes

Ingredients - makes 10 cakes

100g baking margarine
100g caster sugar
2 eggs
100g self raising flour
1 tsp vanilla paste

Method

Pre heat the oven to 180C

1 - Place all of the ingredients in a large mixing bowl and mix until all of the ingredients are evenly combined and you have a smooth cake batter

2 - Spoon the cake mixture evenly into the cupcake cases

3 - When the oven has reached the desired temperature add the baking tray of cupcakes and bake for 20 minutes

4 - Once thoroughly baked leave to cool completely on a cooling rack

5 - For the topping melt 100g chocolate in a glass bowl over a pan of boiling water


6 - Using a spatula cover the cupcakes with a layer of melted chocolate, add some sprinkles or mini eggs if you have any leftover!




If you do not have 100g of chocolate but have lots of bits, place them in a plastic bag, bash with a rolling pin until you have crumbs. Bake the cakes following the recipe above but when it comes to decorating make a butter icing by mixing 225g of butter at room temperature with 500g icing sugar then pipe over the top of the cakes, sprinkle over the chocolate crumbs and finish with mini eggs.
