I love Valentine's day. As much as I believe in showing our loved ones how much we love them all year round, I do love an excuse for a bit more romance.
This year Aldi have got everything that you need to show your special person how much you love them. Whether you are looking for flowers, chocolates, champagne, a teddy, they have it.
But, if you have a loved one who loves cake then these little cupcakes of love will certainly steal their heart. Homemade gifts are not only made with love but are a great way to save money. If your budget is tight this Valentine's day then these cupcakes will come to the rescue!
This is what I did...
Valentine's Cupcakes
Ingredients
100g baking spread
100g caster sugar
100g self raising flour
2 eggs
150g icing sugar
50g baking spread
Red food colouring
Heart shaped sweets
Method
Preheat the oven to 180C
1 - Place the butter and sugar in a bowl and mix together until light and creamy
2 - Add one egg at a time with a little flour to prevent curdling
3 - Mix in the remaining flour until you have a smooth batter
4 - Spoon into cupcake cases, you should get 6 cupcakes from the mixture
5 - Place in the centre of the preheated oven and bake for 20 minutes
6 - Once thoroughly baked remove from the oven and allow to cool before decorating
7 - To make the butter icing mix the spread until softened and gradually add the icing sugar until you have a stiff butter icing
8 - Add a couple of drops of red food colouring to give the butter icing a pink tint
9 - Place the butter icing in a piping bag and decorate using your favourite nozzle
10 - Finish the cupcakes with a heart shaped sweet
These cupcakes will definitely delight your loved one this Valentines day. Whether you decide to have them as a Valentine's dessert or sneak one into your loved ones lunchbox as a lunch time surprise they will show your love!
