Stews are a great way of adding extra vegetables to a meal without the children always knowing exactly what they are eating. My eldest is adamant that he does not like butternut squash, but when I use it is a stew he eats it with no questions asked. Stews can often take a while, especially if you are using a slow cooker. But since I got my Pressure King Pro to review I am able to make a quick and easy stew in a faction of the time. As a busy mum this is something which has made meal time a lot easier and quicker!
This recipe is full of delicious vegetables but also has the bacon and lentils to bulk it up. With the celeriac mash it really is a filling meal.
This is what I did...
Lentil and Bacon Stew with Celeriac Mash
Ingredients
1 butternut squash, skin and seeds removed and chopped into cubes
1 onion, chopped
3 cloves of garlic, crushed
1 leek, halved and sliced
1 yellow pepper, chopped
200g mushrooms, chopped
2 carrots, grated
1 courgette, grated
6 rashers of smoked bacon, chopped
150g red lentils
2 x 400g tins chopped tomatoes
2 tbsp tomato puree
2 tsp smoked paprika
1 vegetable stock cube
Salt and pepper
1 celeriac, trimmed and chopped
25g butter
Spray oil
Pressure King Pro Method
1 - Spray a light covering of spray oil on the inner pot
2 - Select the stew function and add the onion, leeks, peppers and bacon and cook for 5 minutes, stirring regularly
3 - Add the butternut squash, mushrooms, carrot, garlic and courgette and cook for 2 minutes
4 - Press cancel and add the lentils, chopped tomatoes, tomato puree, smoked paprika, vegetable stock and seasoning
5 - Add the lid ensuring the valve is closed, select the stew function and leave for 30 minutes
6 - While the stew is cooking bring a pan of salted water to the boil, add the celeriac cubes and leave to simmer for 20 minutes or until soft
7 - Once softened, drain the water, return to the pan and mash with the butter and season
8 - Once the Pressure King Pro has finished release the steam, ensure you wear a glove to prevent burning and serve with the celeriac mash
Oven Top Method
Follow steps 1 to 4 using a large saute pan. Bring the pan to the boil then reduce the heat, cover the pan and leave to simmer for about an hour.
Slow Cooker Method
Place all of the stew ingredients into the slow cooker and cook on a high heat for 2 hours then reduce the heat to low and cook for a further 2 hours.
I love the celeriac mash with this stew. Celeriac really is such an under rated vegetable and simply not used enough! It adds such a lovely nutty flavour to it and with the indulgent butter you really are in for a treat!
