This week was always going to be a tricky one for me regardless of what the theme was.
We are going on holiday on Friday and it is always manic getting everything ready.
However I decided to use this weeks theme to some good use.
The canapes that I am making will be great little nibbles for the journey.
That is if my lot can manage to keep their fingers off them until then!
I am amazed that I have actually managed to bake these along with getting ready for holiday.
Here is what I have made:
Pesto, goats cheese and courgette tarts
Ingredients
Pastry
125g plain flour
63g chilled butter, cubed
A pinch of salt
1tbsp dried basil
1 egg yolk
25mls water
Filling
Basil pesto
Soft goats cheese
Courgette, a couple of slices quartered
Heat the oven to 180C
1 - Put the flour, butter, salt and dried basil in a food processor and blitz until you get a breadcrumb texture
2 - Add the yolk and the water and mix
3 - As soon as the dough comes together remove from the food processor and form into a ball
4 - Wrap in cling film and chill for minimum of 30 minutes
5 - Once chilled roll out and cut circles with a cutter
6 - Place in either silicone cases or a cupcake tin
7 - Place about half a tea spoon of pesto in each pastry case
8 - Top with a ball of goats cheese and place in the courgette quarters
9 - Bake for about 20 minutes until browned
Cauliflower, Broccoli and Stilton Tarts
Ingredients
Pastry
125g plain flour
63g chilled butter, cubed
A pinch of salt
1 egg yolk
Half tspn cayenne pepper
25mls water
Filling
A few florets of cauliflower and broccoli
Stilton cheese
A drop of full fat milk
Heat oven to 180C
1 - Make pastry as about just replace the dried basil for cayenne pepper
2 - Chill in the fridge for minimum of 30 minutes
3 - While the pastry is chilling boil the cauliflower and broccoli until soft
4 - Blend the cauliflower and broccoli until you have a smooth texture
5 - Crumble in the Stilton and a drop of milk and mix all together
6 - Once pastry has chilled roll out and cut the tart bases
7 - Place about 1 tspn of the cheese and vegetable mix
8 - Bake for about 20 minutes or until browned
Tuna Puff Pastry Case
Puff pastry (I am so sorry but I had to use ready made due to the time scale!)
Tinned tuna
Passata
Red onion
Cayenne pepper
Heat the oven to 180C
1 - Fry the onions until soft in a little olive oil
2 - Add the tuna and fry for a couple of minutes
3 - Mix in the passata and cayenne pepper and heat for a few minutes
4 - Remove from the heat and leave to cool
5 - Once cooled cut out circles of puff pastry
6 - Pinch the four corners together so that you create a square basket
7 - Spoon in approx half a teaspoon of the tuna mix into each puff pastry basket
8 - Bake for approx 20 minutes or until browned

Puff pastry (I am so sorry but I had to use ready made due to the time scale!)

2 - Form a ball of goats cheese and add to each basket
3 - Top with a quarter of a cherry tomato
4 - Bake for approx 20 minutes or until browned
