#CookBlogShare 2018 Week 19 - Plus 4 Delicious Dishes

What a lovely long weekend it has been. Got to love an extra day at home. I don't now about you but as soon as the sun comes out our barbecue comes out and this bank holiday did not disappoint! We had lots of food al fresco, went to a foodie festival and spent time in the garden.

Over the weekend Doncaster hosted not only the finish line for the first stage of the Tour de Yorkshire but also had their own food festival called Delicious Doncaster. The hubby and I love a good foodie festival, yes I am not the only foodie in the house! The market area was full of delicious street food stalls, local produce, locally made alcohol and even The Hairy Bikers! Yes the bikers were there doing demonstrations and taking in the atmosphere. Needless to say we came home with lots of foodie treats!

Last week work was manic. Last week I was interviewed for permanent extra hours at work and I am delighted to say that I got the job! Working full time is obviously going to mean that I have got less time to blog. The last post that I wrote was to blog or not to blog? I have to admit that I am not ready to give it up. So during term time, things will be quiet but when the school holidays come around I hope to be able to blog for the love of writing and creating recipes. I have found that blogging less recently has given me more of a urge to write. Writing because I want to is completely different to writing because I feel that I have to. This means that things are going to change with regards to #CookBlogShare. After this week I will be hosting only during the school holidays, when it is my turn to host during term time I will be looking for some guest hosts to help out, so if you have a spare week please do shout out!

Now onto this weeks #CookBlogShare feature recipes. Last week the linky was with the lovely Eb at Easy Peasy Foodie. This weeks feature does not have any particular theme apart from all four recipes are now on my 'must try' list!

Here are my four favourite recipes from week 18 of #CookBlogShare...

Pasta is always a winner in our house and now that I am super busy pasta is my go to meal after a manic day. So there was no surprise when the first two recipes stood out.

Searching for Spice created a meal that I am really keen to try. This avocado spaghetti with chilli and lemon is a fantastic meal that incorporates the super healthy fat that avocados provide. I imagine that the creaminess from the avocado perfectly balances the hit from the chilli and the sour from the lemon. An explosion of taste!

The Veg Space took on an all time classic and reinvented it into a healthy vegan version. This vegan butternut squash mac and cheese is going to be on my meal plan this week! I have got two fresh butternut squash to use and in a mac and cheese sounds like the ideal way to use them! Plus when you have all of the ingredients in the cupboard you know that it will be a winner!

The following two recipes are ones that are perfect for the sunny weather.

All three children love beetroot, as do the hubby and I, so as soon as I saw this recipe from Recipes Made Easy it was straight on my to try list. This beetroot hummus is the perfect side dish for a lovely al fresco barbecue. We love to eat hummus with crunchy veg but this sounds amazing with fresh bread and goats cheese!

My final recipe this week is one from Jo's Kitchen Larder. Pesto is another firm favourite in our house. It is one of my go to ingredients especially when I am short of time so having a jar of this wild garlic and walnut pesto would tick so many boxes! I adore the flavour combination and the addition of the wild garlic. What is there not to love!

Now over to you and this weeks linky. But first let me recap the guidelines that we ask you to follow...

  2. Huge congratulations of the job interview Kirsty :-) I love a good food festival too - we often come home with lots of purchases and plenty of inspiration, Jo's wild garlic recipes have me inspired to get foraging for some at a local spot I know :-)

  3. I think a Must Try is as good a theme as any for a round-up. Thanks for including my beetroot hummus.

Looks like to had a great weekend, I spent mine gardening or painting in Suffolk and didn't take time off to go to the coast which is a shame given it was only a few miles a way. But yes the BBQ did come out.

    Congratulations on getting the Job.

  13. Hearty congratulations on the job, Kirsty! I am sure that we all relate to your blogging/writing dilemma. I'm not sure of the deets for hosting a linky, but I'd be happy to help out (and I'm a pretty quick study). Great round-up here—I'm especially intrigued by Corina's avocado pasta! Thank you for hosting, and best of luck to you.
