This pie has become a family favourite and is a meal that I can rely on if I have forgotten to take any meat or fish out of the freezer. This is also a cheap meal to make, that is why I am sharing it with you.
A day late this week but here is this weeks Cheap Budget Meal...
Egg and Bacon Pie
Ingredients
6 eggs, hard boiled and chopped (£2.49 for 12 eggs)
4 rashers of smoked bacon, chopped (£2.18 for 8 rashers)
350g plain flour
175g butter, cubed
3 eggs
2tsp water
Milk
1tsp Chopped fresh parsley
100g cheese, grated (£1.80)
Method
Pre heat the oven to 200C fan
1 - Place the flour and butter in a bowl and rub the butter in with your fingers until you have a bread crumb consistency.
2 - Add 1 egg and mix in with your fingers and bring the pastry together, adding a little water if needed.
3 - Wrap the pastry in clingfilm and place in the fridge to chill for about 30 minutes.
4 - Fry the chopped bacon in a little oil until cooked through.
5 - Remove the pastry from the fridge and divide into two pieces.
6 - Roll out one half and line a pie dish.
7 - Place half of the hard boiled eggs onto the pastry base, followed by a layer of bacon, topped with the remaining eggs.
8 - Beat 2 eggs together in a measuring jug and add milk to 250mls.
9 - Mix in the chopped parsley and grated cheese.
10 - Pour the egg mixture over the pie filling.
11 - Roll out the remaining pastry, cover the pie and seal around the edges.
12 - Brush with a little milk to glaze.
13 - Place in the pre heated oven for 30 - 40 minutes.
Bacon and Egg Pie can be enjoyed as it is for lunch or served with potatoes and vegetables or salad for dinner.
Thanks to our chickens this meal is a great money saving pie. However it can be made for just £6.47 when buying eggs. That is just £1.08 per serving (this pie will easily serve 6) and you will have eggs and bacon remaining for another meal.
