Usually when we think of lamb we think of Easter. However lamb can be enjoyed at any season. Also when we think of lamb we often think of New Zealand. But there is also Welsh lamb! Welsh lamb is full of flavour and it is also better for the environment. There has not been all of the miles that the meat has needed to travel thus making it fresher!
I was sent some organic Welsh minced lamb to try for National Burger Day, which is tomorrow! We love homemade burgers, I always find that they are so much more tastier but it is great to know exactly what has been used to make the burgers and the quality of the meat.
Lamb is such a flavoursome meat and goes well with various herbs and spices. For these burgers I have used mint and cumin as my additional flavours along with some onion and garlic and some homemade tzatziki.
This is what I did...
Welsh Lamb Burgers with Homemade Tzatziki
Ingredients
400g organic Welsh lamb mince
8 large mint leaves, chopped
1tsp whole cumin seeds
1 lg garlic clove crushed
2 heaped tsp spelt flour
4 spring onions, chopped
Tzatziki
1/4 cucumber, grated
1/2 lemon, juiced
1 garlic clove, crushed
2 tbsp chopped fresh mint
250g low fat Greek yogurt
Method
1 - Place the lamb mince in a large mixing bowl and add the chopped mint leaves, cumin seeds, spring onion, garlic and spelt flour
2 - Using your hands mix all of the ingredients together and divide into 4 pieces
3 - Mould each piece into a ball and gently flatten
4 - Heat a large frying pan over a high heat
5 - Once fully heated add the lamb burgers, you will not need to add any oil as the juices will cook the burgers
6 - Cook on each side for about 8 - 10 minutes or until fully cooked
7 - To make the tzatziki place the grated cucumber, lemon juice, crushed garlic, mint and Greek yogurt in a bowl and mix together
These burgers are delicious served in a flour wrap accompanied with salad and the tzatziki. The children loved these buns the traditional way, in a bread bun with a good dollop of ketchup!
