In our house a quick an easy pasta dish is always a winner. Pasta is such a versatile ingredient and can be adapted in so many ways to suit everybody.
This dish is such an easy recipe to make, you simply cook the ingredients and throw them all together. It really is that easy!
This is what I did...
Bacon and Broccoli Pasta
Ingredients
8 rashers of bacon, rind removed and chopped
1 large floret of broccoli, chopped
200g chestnut mushrooms, chopped
1 onion, chopped
300g wholegrain pasta
50g mature cheddar, grated
1 tbsp olive oil
Method
1 - Cook the pasta as per instructions.
2 - Boil a pan of water and add the broccoli florets and simmer for 5 - 10 minutes until cooked al dente.
3 - Heat the oil oil in a large, deep frying pan and gently fry the bacon, onions and mushrooms for 10 minutes.
4 - Once the pasta is cooked, drain and keep on one side.
5 - Drain the broccoli and add to the pan with the bacon, onions and mushrooms and cook for a few minutes.
6 - Add the pasta and stir all of the ingredients together.
7 - Scatter over the grated cheese and place under a high grill until the cheese has melted then serve with garlic bread.
This really is such an easy meal so is perfect for a quick after school meal.
