Cooking pancakes is great fun and very simple. Try this recipe for an indulgent weekend breakfast.

Servings: 16 pancakes

Cook Time: 30 minutes

Ingredients

2  whole eggs
400 ml milk
1 tsp vanilla essence
2 cups self raising flour
1/3 cup caster sugar

Method

1 - Add milk, eggs and vanilla to a jug and whisk to add a little air. Sift flour and sugar into a large mixing bowl. Add milk mixture to a well in the centre and whisk until all ingredients are combined and no lumps are visible.

2 - Add a little butter or walnut oil to a large frying pan and put onto a medium heat. Take 1/4 of a cup of mixture and pour into the centre of the pan. Cook gently until bubbles appear on the mixture's surface. Turn or flip and cook the other side for a similar time. Add a little more butter or oil and repeat until the mixture is used up.
