Chicken and Kale Korma

We love a good curry. But as we are keeping our spending down we cannot afford a takeaway. The other week we decided to buy a ready made curry from an upmarket food chain and after we had eaten we really were not happy. The quality was not good and we really did not enjoy our meal after spending as much as we had. So to try and make up for that disaster I thought I'd make my own curry with the help of Aldi's Specially Selected Mild and Creamy Korma curry sauce. 


I have never used this sauce before but I loved how it came with a sachet of spices to add to the chicken before adding the sauce. This enabled the flavours to fully develop as the meat cooks. This sauce creates a deliciously creamy, fragrant and mildly spiced curry. The coconut, cream, yogurt and ground almonds give it a truly authentic finish. To give this curry some added goodness I have added some shredded kale. When it comes to leafy, green vegetables you just know that they are good for you. Kale is classed as a super food, it is an excellent source of vitamin K, C and A. But what not many people know is that kale is an great source of calcium which makes it a useful source for vegans or people who follow a dairy free diet. But the list does not stop there, kale also contains folate (folic acid), anti oxidants, manganese, copper and it virtually fat free and low in calories! If you struggle to get the kids to tuck into some kale at dinner time, then do what I do, add it to a meal that is sauce based and watch them eat it all up!

This is what I did...

Chicken and Kale Korma

Ingredients - Serves 4 - 5

800g chicken breast, diced
100g shredded kale
2 jars of Aldi Specially Selected Mild and Creamy Korma Curry Sauce
1 tbsp oil
Rice to serve

Method

1 - Heat the oil in a large saute pan

2 - Once the oil is hot add the diced chicken and cook for 5 minutes stirring regularly

3 - Once the chicken is browned off add the kale and continue to cook for a further 5 minutes

4 - Sprinkle over the spices from the sachet that comes with the sauce and mix thoroughly

5 - Pour over the sauce, bring to the boil and simmer for 10 minutes

6 - Once the chicken is thoroughly cooked serve on a bed of rice with a naan bread on the side.


This curry was a huge success with everyone. The children all ate it and did not even question what the kale was. We had clean plates all round! The sauce really was as good as the takeaway sauces that we love and was certainly so much better than the ready made curry that we got the other week and what is even better was that it was a fraction of the cost! If you are looking at making a curry at home I definitely recommend that you check out Aldi's Specially Selected curry sauces. As I was told at the recent Aldi event that I went to, the buyers aim for upmarket food chain quality at the lowest price possible.

Next time I will be trying the Tikka Masala sauce!

  1. This sounds like a fabulously simple but super tasty midweek meal, Kirsty! I do love kale...we've been eating quite a lot of it recently, so glad it is doing me so much good!! I do agree, so often a homemade curry is much nicer than a ready meal...or even sometimes than a takeaway. Plus I love how you know exactly what's in it and can adapt it to your family's preferences. Homemade curry tends to be much healthier too - so it's win win all round, really!! Eb x

  3. I think it's great to add some kale to a curry - I love to bulk out homemade curries with lots of vegetables and definitely prefer homemade ones, although we do sometimes get ready made ones if we know there's not going to be much time to cook or fit everything in that we need to do!

  4. I'm really not keen on ready meal curries and agree that you can make something so much nicer at home! I love how you've got the kids to eat kale here - I am going to try this, although I suspect I may need to blend it into the sauce to get my lot to eat it. #CookBlogShare
