I love being able to prepare food to eat outside. Whether it is a barbecue or a picnic, as soon as the sun is out so are we!
This week I am sharing with you a super easy cheese and onion quiche. Quiche is a perfect summer pie. It is ideal to pack up for a picnic or to serve along side some salad and barbecue meats or fish.

Once you have the picnic essential you can concentrate on the all important food. Salad, hand baked crisps, dips, sandwiches and bubbly are top of the list along with some of my delicious quiche.
This is what I did...
Cheese and Onion Quiche
Ingredients
350g shortcrust pastry
6 eggs
150mls double cream
100g red Leicester cheese, grated
6 shallots, chopped
Sprinkle of black pepper
Method
1 - Pre heat the oven to 180C
2 - Line a flan tin with the shortcrust pastry, score with a fork, line with baking paper and baking beans
3 - Place in the pre heated oven for 15 minutes, remove the baking beans and baking paper and return to the oven for a further 10 minutes to brown off
4 - Remove the pastry base from the oven and scatter over the base half of the cheese and half of the chopped shallots
5 - Beat the eggs together with the double cream and sprinkle in the black pepper according to taste
6 - Pour the eggs in to the pastry base, sprinkle over the remaining cheese and shallots
7 - Place back in the oven and bake for 10 - 15 minutes or until golden
This quiche is perfect for a summer meal. Ideal for barbecues and picnics.

I've got very excited about picnics now that the sun is finally shining. I'm planning one for tomorrow before the sun disappears again! I will need to get out and stock up on picnic essentials - thanks for the inspiration.
