I love the depth of flavours that cider can add to a meal. That is why I decided to use it in my slow cooked pork. Slow cooking meat allows the meat to remain moist and full of flavour. But they are also easy meals to cook as you simply place your ingredients in the slow cooker and let the cooking process develop the flavours. Slow cooked meals are perfect for those busy days!
This recipe idea came from my Slow Cooked Game in Cider recipe. We love game but it is not always available or in season. That is why I decided to transfer the flavours to a meat which is more readily available.
What better meat to combine with apple than pork. The two go hand in hand!
This is what I did...
Slow Cooked Pork in Cider
Ingredients
400g diced pork
6 shallots, chopped
300g mushrooms, sliced
400mls dry cider, I used Henney's Cider
100mls double cream
1 apple, cored and diced
Black pepper
Method
1 - Seal the diced pork by quickly frying in a pan over a medium heat
2 - Place the meat in the slow cooker along with 5 of the chopped shallots and 250mls of cider
3 - Slow cook on a high heat for 4 hours or on a low heat for 8 hours
4 - 45 minutes before the meat is due to be finished add the mushrooms to the slow cooker along with the diced apple
5 - Once the meat is cooked remove from the slow cooker and pour the juices and apple pieces into a frying pan along with the remaining chopped shallots and cider
6 - Return the meat to the slow cooker to keep warm
7 - Bring the sauce to the boil and then simmer until the sauce has reduced down to a thick consistency
8 - Remove from the heat and stir in the double cream and a sprinkling of black pepper
Serve with vegetables and potatoes with the sauce and apples drizzled over the meat.
The sauce makes this everyday meat into something really special. The sauce adds a delicious richness that is both a lovely weekend treat and will even impress any dinner guest you may have!
