British Sandwich Week - Two Italian Toasties

Who doesn't love a good sandwich? The mighty sandwich is such a versatile meal, it can be easily adapted to suit individual taste, there really is nothing that you cannot do with a sandwich.

One of our favourite ways to have a sandwich is by toasting it. When you toast a sandwich the flavours transform into something special. So when I was asked if I would like to try the Breville DuraCeramic Sandwich Press I jumped at the chance. Toasted sandwiches are a firm favourite with everyone here so I had a feeling that it would go down well!


To celebrate British Sandwich Week I was challenged to create an international, flavours from around the world, sandwich. I decided to use Italian flavours. We all love Italian dishes and flavours and even more so after our holiday to Italy last year.


Like all families, we have different tastes. I love vegetables, while the Hubby is a big meat eater. So to satisfy all of our tastes I have created two delicious Italian deli style toasted sandwiches, one filled with vegetables and the other filled with meat.

Beef Kheema for Great British Beef Week

This week is Great British Beef Week so this weeks recipe with Aldi features their 100% British beef. Aldi are committed to sourcing only 100% British beef that comes from Red Tractor assured farms. This means that they are able to trace back all of their meat to the farm of its origin. The Red Tractor is one of the largest food standard schemes in the UK and they ensure that the welfare of the animals is protected, food safety is paramount and that everything from the care to packaging of the meats is environmentally friendly. 


With Aldi offering some of the best prices on the market seeing the Red Tractor on all of their beef you can be confident that you are going to be cooking and consuming great meat.

To celebrate Great British Beef Week and to also celebrate the fantastic prices at Aldi I am sharing with you a curried beef recipe, beef kheema. This is a simple yet full of flavour dish that can be served in a variety of ways.

#ThankGoodness for Dolmio

When feeding a family it is essential that the meal is both delicious and full of goodness. As much as we would all love to be able to cook meals from scratch when you live in a busy family household it really is not always feasible. Thankfully on days when you need a helping hand you can rely on Dolmio to not only provide you with an authentic Italian sauce but one that is also full of goodness. The Dolmio bolognese sauce that I have used in this recipe is 100% natural. Check out the video below that shows you exactly what goes into each jar of Domlio Bolognese sauce.





Each jar contains at least 10 juicy tomatoes, tomato puree, half an onion, a tablespoon of sunflower oil, garlic, basil, herbs, a teaspoon of cornflour, a teaspoon of salt, a pinch of pepper, two teaspoons of beet sugar to taste, a squeeze of lemon juice and water. There are no artificial colours, flavours, preservatives or sweeteners so you know that when you feed your family a meal that uses the Dolmio sauce they are getting natural goodness. The sauce is so good it provides you with one of your daily recommended five a day!




Bolognese sauce is often purely associated with spaghetti or pasta. But I am going to show you that it is so much more. Bolognese sauce is such a versatile sauce that can be used to create a vast array of delicious, family friendly meals. It can be used in so many different ways there really is no fixed way to enjoy the sauce. Let your imagination and culinary creativity run free and use the Dolmio bolognese sauce as the base of so many amazing dishes.


In this post I am going to tell you how to prepare a full of vegetables bolognese base with the Dolmio original sauce. But I am also going to show you how you can transform the sauce into three different meals. All three are wholesome meals with three distinct flavours. Haggis Cottage Pie and My Top 6 Whiskies for Burns Night

We love Scotland. It has to be our favourite holiday destination in the UK and we always leave with dreams of moving there one day. It is such a beautiful country, has lovely food and of course the best alcohol! So each year when Burns Night comes along we celebrate with a haggis served with neeps and tatties, all washed down with a wee dram, or two!

As much as we love haggis, it can be a bit a bit of a strong flavour for the children. That is how this recipe came about. But this also helps your haggis go that bit further if you are preparing a meal for more than 3 people. While we were in Scotland last year we had a fantastic haggis dinner at the Glenfiddich distillery. It was beautifully layered and came complete with a whisky sauce. This is where my idea for styling this dish came from. But what makes this haggis dish different is that it also contains Scottish Aberdeen Angus minced beef as well as other vegetables other than the classic neeps and tatties!

Love it or Hate it Cottage Pie

This is going to be one of those love it or hate it recipes and one that I know will certainly divide my audience but it is just too good to go unshared!

I have recently joined a local Slimming World group, which I am planning to tell you more about soon. Changing the foods that I can eat freely has made me look at healthier alternatives and ways to add more flavour to meals. Cottage Pie is a firm family favourite but I usually thicken the stock with gravy granules. But, if you follow the Slimming World plan you will know, gravy is not a free food. This got me thinking of a different ingredient that was not only free but would also do the job. The magic ingredient did an amazing job, it thickened the stock to a gravy consistency and added a delicious depth of flavour!

The secret ingredient is Marmite! Hence me calling this my Love it or Hate it Cottage Pie. Even if you are not a lover of Marmite this dish is definitely worth a try. The two boys hate Marmite in sandwiches but loved this cottage pie and still have no idea what I used!

#FoodieseekerFriday - A Taste of Carnival Vista - Guy's Burger Joint

Welcome to this weeks FoodieseekerFriday post. This week I am sharing my first "A Taste of Carnival Vista" recipe posts. Before we even boarded Vista I knew that I wanted to rekindle the holiday magic as often as possible once home. The best way for me to do that is to recreate some of the spectacular meals that we indulged on. Carnival pride on supplying food to please everyone and they certainly do not disappoint. They provide a wide variety of dishes that change daily in the Lido self service marketplace, have their speciality restaurants and the pool side, made to order, diners.

Today I am going to tell you about one of the inclusive diners, Guy's Burger Joint. As soon as we took one bite of the epic burgers that were served here we were hooked. They were unlike any burger that we have had before! Carnival have designed an authentic burger bar with the help of American best selling author, Food Network television star and restaurateur Guy Fieri.

Guy Fieri owns a host of all American restaurants that specialise in a variety of cuisines from a good old barbecue to Mexican burritos, from American kitchen to the burger joint. So when it comes to a good, authentic burger Carnival certainly went to the man who really does know his stuff!

Aldi's Quick and Easy Fajita Dinner Kit

As much as I love cooking all of our meals from scratch, sometimes I want to have a quick and easy meal that doesn't take too long. When I was shopping in Aldi the other week I spotted their Quick and Easy Fajita Dinner Kits. We love Mexican food and it really is a favourite meal of ours.


The Fajita Dinner Kit is priced at just £1.25 and each box contains:
  • 8 flour tortillas
  • 125g tomato salsa
  • 30g fajita seasoning
All that you need to add is 450g of beef or chicken and 300g of vegetables.

The Evolution of McDonald's

I was lucky to be invited to a recently refurbished McDonald's restaurant in the centre of Leeds. McDonald's has to be the world's best known fast food chain and one that we have been enjoying for years! I have fond memories of having McDonald's as a child and even of my late Nanna asking for cutlery when we gave her her meal. With McDonald's you know what you are going to get. If you order a Big Mac in Spain, you know that it is going to taste the same as it does in England. So when I was offered the chance to learn more about how McDonald's are evolving and how they are making their food even fresher I could not wait to attend!

The first thing I noticed when I arrived at the Briggate Leeds restaurant was the modern, street art deco throughout the restaurant. The restaurant had a fresh feel to it and was the first way that I saw how McDonald's is evolving.


To start I met some of the senior McDonald's staff, the press team and two other bloggers. It was during this meeting that we were given some background information about McDonald's.

Did you know that in the UK there are 1250 restaurants? I knew there were a lot but what I did not know is that a lot of these restaurants are actually franchise restaurants! At the end of 2013 beginning of 2014 McDonald's started to refurbish their restaurants. They wanted the digital age to be a huge part of the refurbishment. This includes self service kiosks. So far 500 restaurants have undergone the refurbishment and they aim to have all of their 1250 restaurants completed by 2018. Not only is the digital age a big focus but the companies commitment to the environment is essential. They now have two bins for your rubbish. One for landfill and the other for recycling waste. They have also been using their waste cooking oil to fuel their delivery lorries! What a genius way to reuse it!

After having a chat it was time to go down to the restaurant and the kitchen. While we were there we got the chance to see and even have a go at ordering a meal using the new digital self service kiosk.

Steak Pie

Who doesn't love a good pie? Pie has to be one of the best comfort foods and it is one of my hubby's favourite meals. I know that pie is a perfect winter time meal but we also enjoy pies as an alternative to a Sunday roast. The recipe that I am sharing with you today is what I made on Father's Day.


The five ingredients, pictured above, combine together to make a truly delicious pie filling. I recently discovered that Aldi stock some fantastic mixed herb grinder pots from Stonemill. For this recipe I have used the garlic, herb and tomato seasoning grinder. These little, full of flavour, pots are an ideal way to add extra flavours to your dishes in a perfectly balanced way.

Slow cooking the pie filling in either a slow cooker or in the oven as I did leaves you with lovely tender meat and you can prepare it and leave it to cook while you spend time with your family.

#PowerofFrozen Beef and Bean Cabbage Parcels

Back in March I wrote my first post about Iceland and their #PowerofFrozen campaign. Today I am back with another recipe using products from Iceland. Today's recipe is all about convenience. I don't know about you but I often forget to take meat out of the freezer in time to cook. When this happens everything gets turned upside down. As you probably know I write a weekly meal plan, I like to have the organisation at meal time and have it all pre planned. 

Having products in the freezer that can be cooked from frozen really are a necessity in our busy lives. As organised as we can be, there are times when life simply takes over and things get forgotten. Today's recipe is perfect for both a mid week meal or to impress some dinner guests. Today's meal is made using British butchers quality minced beef that can actually be cooked from frozen! I have paired it with frozen vegetables that can also be cooked from frozen. How convenient is that!

Not only is this a convenient meal but it is also a great money saving meal. After I have told you how to make this delicious dish I will tell you the costings!

Natural - Parragon Book Buddy Review and Recipe

Being a Parragon Book Buddy means that I get to try and discover lots of new and exciting cookbooks. This month I am thrilled with the book that I am going to tell you about today. This book has become my new favourite book. That book is Natural - Wholesome Recipes for Pure Nourishment.


In our house we love books and I particularly love cookbooks. I really appreciate a good, quality book and Natural really is a pleasure to have. This book has been made with the highest quality materials and is a lovely book to hold, that a feeling that you simply cannot get online.


The first chapter of this book introduces you to "The Natural Way" of eating. This is a way of eating that we, as a family, are passionate about. The opening paragraph of this book sums our beliefs completely...

"Fresh, natural and simple ingredients play an important role in eating well and encourage a clean and health-giving approach to everyday eating. Incorporating more nutrient-dense foods and less processed ones into your diet will also help to boost, balance and benefit your overall health and happiness."

For a while now we have been trying to cut out as many processed foods from our diet as possible. The majority of our meals are all cooked from scratch, except from when I want the odd night off and we buy pre prepared food.

If you want to eat cleaner then Natural is a fantastic book for both people who want to start eating clean as well as families like us who do try to eat clean. It is full of ideas for breakfasts, energy fuelling lunches, snacks and sides, dressings, sauces and dips, a feast of vegetable based mains, power packed protein mains, sweet treats and healthy nectar's.

So when it came to giving you an example of one recipe, I struggled which one to choose. There are so many recipes that I have simply got to make. But I did select a recipe, and I chose the Slow Cooked Beef with Smashed Butter Beans.


I have chosen this recipe to show you that eating clean is not as some people imagine. It is not just about vegetables, seeds, lentils and superfoods. It is simply about cooking from scratch using fresh ingredients and creating a deliciously flavoursome meal. I have added a  few extra vegetables for added goodness as I find that my children like their vegetables in the sauce and I made a couple of changes to adapt it to our taste.

This is what I did...

Slow Cooked Beef with Mashed Butter Bean and Potatoes

Ingredients

Slow Cooked Beef

2tbsp olive oil
1.6kg beef brisket
2 red onions, quartered and sliced
3 carrots, quartered and chopped
6 baby parsnips, quartered and chopped
6 baby turnips, quartered and chopped
1 tin 400g x chopped tomatoes
800mls beef stock
2tsp Worcester sauce
Salt and pepper - optional

Smashed Butter Beans

750g potatoes, chopped with skins on
1 x 400g tinned butter beans, drained and rinsed

Method

1 - In a large pan or oven top casserole dish brown off the meat and place on one side

2 - Heat 2 tablespoons of olive oil (or a few good sprays of spray oil) in the pan and once heated add the onions and cook until starting too soften

3 - Add the carrots, parsnips and turnips to the pan and cook over a medium heat for 5 minutes, stirring often

4 - Add the chopped tomatoes, Worcester sauce and seasoning. Stir thoroughly

5 - Return the meat to the pan and pour over the stock

6 - Reduce the heat to low, cover the pan making sure that a little steam is able to escape

7 - Cook on a low heat for 4 hours to 4 hours and 30 minutes stirring every so often to stop the ingredients sticking to the base.

8 - For the potato and butter bean mash simply place the potatoes and beans in a pan of boiling water and leave to simmer for about 20 minutes or until soft enough to mash

9 - Drain and mash


Serve the beef with the potato and butter bean mash and add some green vegetables on the side.



As the meet has been slowly cooked for over 4 hours you will not need to slice the meat, it will be so tender that it will fall to pieces!

It is a truly scrumptious meal, that will keep your family asking for more!

Leftover Beef and Bean Hotpot Pie

A few weeks ago I made a delicious Slow Cooked Beef and Bean Hotpot. One thing that I love about cooking a large slow cooked meal are the leftovers. Leftovers make such great second meals and I always enjoy transforming them into a completely new dish.

I always find that leftover meals are so flavoursome and I often find that the meals taste even better the second time around.

When I had some leftovers from my Beef and Bean Hotpot I knew the perfect way to transform this meal was into a cottage pie style meal. Cottage pie meals are always a huge success in our house and a meal that the children always love.

Leftover Roast Beef Pie

This pie is a delicious way to use up any leftover beef from a roast dinner. I always find that when roast beef is recooked in a different dish the flavours develop even more and make the meat even tastier!

This dish is not only great for leftovers but is also an easy meal to make. Even if you do not have a lot of beef left to use you can bulk it out with extra vegetables. I have made my own pastry but you can always use pre made which can be a lot easier if you are preparing this meal on a busy day!

Spicy Beef with Creamy Mash

One of the best things about cooking a big joint of meat is the leftovers!
 
I enjoy the challenge of coming up with tasting, new ways to use my leftovers.
 
This week I slow cooked a lovely piece of silverside beef. Whenever I cook a joint of beef I always cook it in the slow cooker. I find that the meat is much more tender and love how it is almost impossible to slice because it so moist and lean. Plus the juices that are left in the slow cooker makes the most delicious gravy!
 
This week I wanted to try something a bit different that would be a real winter warmer!
 
I had a look through some of my cook books and in Jamie Oliver's Save with Jamie was a Mexican chili beef that sounded delicious!
 
However when I looked in my cupboard and fridge I was missing quite a few ingredients.
As I normally do, I added a few new ingredients and took a few off and created a new dish!
 
This is what I came up with...
 
Spicy Beef with Creamy Mash
 
Ingredients
 
500g leftover beef
2 400g tins of chopped tomatoes
1 onion, chopped
2 garlic cloves, crushed
1 tsp cumin
1 tsp cinnamon
1 tsp paprika
1/2 tsp ground coriander
1/2 tsp dried coriander leaf
1/2 tsp cayenne pepper
4 tbsp of left over gravy or a beef stock cube
 
Method 
 
1 - Gently fry the onion and garlic in some olive oil until the onions are soft
 
2 - Add the tinned tomatoes and bring to the boil
 
3 - Once boiling, turn the heat down to simmer and add all of the spices one at a time
 
4 - Add the coriander leaf and mix in
 
5 - Slice the beef into strips and add to the sauce, stirring it in so that all of the meat is covered
 
6 - Leave over a low heat for 20 minutes. This time allows the meat to absorb the juices from the tomatoes and the flavours from the spices
 
Serve with either creamy mashed potatoes or rice.
The spices give this dish a real kick and transforms the leftover beef into a tasty new meal!
