A few weeks ago, before we changed our diets, we received a lovely piece of Welsh beef to try for the preparation of Yorkshire Pudding Day!
Who doesn't love a good Yorkshire Pudding? They simply go hand in hand with roast Welsh beef.
To celebrate Yorkshire pudding day on Sunday 6th February, I thought that I would share with you a deliciously roasted with mustard seeds Welsh beef joint.
Mustard Roasted Welsh Beef and Yorkshire Puddings
Ingredients
Silverside of Welsh beef
1 tsp of mustard seeds
1 tbsp olive oil
Salt and pepper to season
150g plain flour
4 eggs
200mls milk
Method
Pre heat the oven to 200C
1 - Using a pestle and mortar crush the mustard seeds and place in a ramekin

2 - Add the olive oil to the mustard seeds and season to taste
3 - Take the piece of Welsh beef and massage in the olive oil and mustard seed mix ensuring that the joint is covered



4 - Place the joint in a roasting tin and place in the centre of the pre heated oven and cook for 20 minutes then reduce the heat to 170C and cook for a further 20 minutes per 500g
5 - Once your Welsh beef is cooked to your liking remove from the oven, cover in foil and allow to rest. I like our Welsh beef to be medium, which has a core temperature of 60C
6 - Turn the heat up to 220C and place your tin in the oven with a little oil rubbed into the pudding sections. To prepare the Yorkshire pudding mix gradually add the eggs and milk to the flour and whisk until you have a smooth batter
7 - Once the oven is to temperature pour the batter into the pudding sections and return to the centre of the oven and bake for 25 minutes

Serve the Welsh roast beef and Yorkshire puddings with a selection of vegetables and gravy.

The Welsh beef was a lovely piece of meat, it cooked really well and retained so much of the flavour. I would definitely recommend Welsh beef.
So this Yorkshire pudding day celebrate how you should, with a good old joint of roast beef. But make sure this year you have Welsh beef!
