I love using up leftovers and am always looking for new ways to incorporate them.
We recently bought an aubergine plant for the garden. When I went shopping I decided to buy some so that the children could have a taste. I decided that the best way for them to have their first taste of aubergine was to make a moussaka. I chose to add the leftover pork for that added bit of flavour!
This is what I did...
Leftover Pork Moussaka
Ingredients
2 red onions, chopped
1 aubergine, sliced
1 courgette, sliced
8 medium mushrooms, sliced
100g mature cheddar cheese, grated
1tsp wholegrain mustard
6 tomatoes, sliced
25g plain flour
25g butter
300mls milk
150g leftover pork, shredded
Method
Pre heat the oven to 200C
1 - Heat 1tbsp of olive oil in a large frying pan over a medium heat and gently cook the onions, courgettes and mushrooms
2 - Brush the slices of aubergine with olive oil and place under a high grill and cook on both sides
3 - Melt the butter in a pan
4 - Mix the flour into the melted butter and heat for a minute
5 - Gradually add the milk a little at a time and stir continuously until you have a sauce
6 - Sprinkle in 75g of the grated cheese and wholegrain mustard
7 - Take an oven proof dish and spoon in half of the onions, mushrooms and courgettes, followed by a layer of aubergines then the pork
8 - Repeat the layers followed by a layer of tomatoes
9 - Pour over the cheese sauce and sprinkle over the remaining grated cheese and place in the centre of the pre heated oven for 30 minutes
This was a delicious meal to introduce aubergines to the children.
