Strawberry and Mint Ice Cream Dessert - #MorrisonsMums Sweet Treats

During the beautiful hot summer months what better dessert to have to cool down than a delicious ice cream. It is so easy to make a scrumptiously creamy ice cream at home without the need of a specialised ice cream machine.

This is an easy recipe which make will definitely impress any dinner guests that you may have over the summer. This is the perfect dessert for a summers evening, or even as an afternoon treat!

After looking at Morrisons Price Checker Tool I was delighted to see that some of the ingredients have been lowered in their price cuts!

  • A box of 18 eggs have dropped from £1.79 to £1.62!
  • 600mls of Morrisons double cream has gone down from £1.68 to £1.60!

Morrisons price checker tool is a great way to which products have been reduced and by how much!

Here is my #MorrisonsMums Sweet Treats recipe...


Strawberry and Mint Ice Cream

Ingredients

600mls double cream
100g caster sugar
3 egg yolks
300g strawberries, halved
5 sprigs of mint
6 large mint leaves chopped

3 egg whites
150g caster sugar

Method

1 - Place the cream and whole mint sprigs into a pan and gently bring to the boil.

2 - Once it has reached boiling point reduce the heat and stir in the sugar, mix until dissolved and remove from the heat.

3 - Whisk the egg yolks with a teaspoon of caster sugar then gradually add to the hot cream.

4 - Blitz the strawberries and chopped mint in a food processor until you have a puree consistency.

5 - Pour the strawberries and mint into the cream and stir.

6 - Remove the whole sprigs of mint and pour the mixture into a freezer proof container with a lid and place in the freezer and freeze over night.

7 - To make the meringues pre heat the oven to 100C.

8 - Whisk the egg whites until you have stiff peaks.

9 - Gently stir in the caster sugar.

10 - Gently spoon the egg whites into a piping bag and pipe onto a lined baking tray.

11 - Place the baking tray in the centre of the pre heated oven and bake for 1 hour 30 minutes.

To serve remove the ice cream from the freezer for 5 minutes to soften a little. Break up a meringue and place in the bottom of a glass bowl. Spoon on the strawberry and mint ice cream, scatter over some more meringue pieces and decorate with a whole strawberry and a sprig of fresh mint. This is a divine dessert which is perfect for cooling down on a hot summers day!

  2. That looks fantastic - how is it so easy?! I thought you HAD to have an ice cream machine. The addition of mint in this is totally up my street and ice cream is one of the few things Reuben will eat, so I think we're on to a winner! xxx

  8. Simple, easy to make ice creams are so wonderful during the summer, especially when fresh fruit is available. I love the combination of the mint with strawberries and the crispy meringue is a wonderful touch for serving...
