Mashed Potatoes and Beef Bowl - The Perfect Quick Meal

Today's post is a guest post recipe and a meal that we love! Cottage pie style meals are always a huge success in our house. One of our favourite ways variations of cottage pie was my Cottage Pie topped with Butternut Squash Mash that was a quick meal thanks to the Pressure King Pro.


But this recipe that has been shared with me is an even quicker one!

On busy weeknights, spending hours in the kitchen is the last thing most of us look forward to, even if we love to cook. For days like this, it is a great idea to prepare a quick and healthy dinner that is not only nutritious but also delicious. This delectable recipe serves four and is bound to give you the perfect comfort food feeling:

You will need:

16 oz/450g mince beef
16 oz/450g package frozen mixed vegetable
2 cups/200g package shredded cheddar cheese
1/4 cup/5g snipped fresh Italian (flat-leaf) parsley
Salt and ground black pepper
2 cups/200g instant mashed potato flakes
2 tablespoons butter, melted

The Method:

1 - Preheat the grill

2 - In a large frying pan, brown the beef and drain off the fat. 

3 - Stir in frozen vegetables at medium heat until thoroughly heated.

4 - Add half the cheese, half the parsley, 1/4 tablespoon salt and 1/8 tablespoon of pepper to the pan and stir.

5 - Combine 2 cups of boiling water, potato flakes, and 1 table spoon of butter. Stir until it becomes a smooth mixture. Season with salt and pepper and set aside. 

6 - Separate the beef mixture into four oven safe dishes and top with potatoes and cheese. 

7 - Grill 3 inches from heat for 2 minutes, or until cheese melts.

8 - Drizzle the melted butter and sprinkle parsley on top to serve. 

A quick meal can be a saviour on busy days or can come in handy when you do not feel like cooking much.
In the time you have saved, you can talk or play with your kids, play some online bingo, or just catch up on your sleep with a quick nap.
