I know that one of my favourite things is seeing my children tucking into a meal and not realising that they are eating vegetables that they, ordinarily, may not have wanted. This incredibly versatile sauce is my favourite go to pasta sauce. It is quick to make, easy to prepare, full of flavour and full of goodness!
There are so many ways that this basic sauce recipe can be used. The possibilities are endless. It can be used with meatballs, with mince beef for a bolognese style sauce for spaghetti or even lasagne, you could add some tuna and have it as a tuna pasta bake, you could even add some water and have it as a soup!
By combining seven vegetables with some herbs you have a great base for so many different meals.
This is what I did...
Ingredients
2 carrots, chopped
1 onion, chopped
1 stick of celery, chopped
2 red Romano peppers, chopped
2 cloves of garlic, peeled
1 large courgette, peeled and chopped
1 x 400g tin of chopped tomatoes
1 tbsp olive oil
Balsamic vinegar
Salt
Pepper
1.5tsp oregano
Method
1 - In a large saute pan heat the olive oil over a medium to high heat and add the onions and gently fry for 5 minutes or until beginning to soften
2 - Add the celery, carrots to the pan, crush the garlic cloves with the knife and add to the pan
3 - Reduce the heat to low, cover the pan and allow to sweat to soften for 5 minutes
4 - Add the peppers and courgettes, stir thoroughly, cover the pan and leave to simmer for a further 5 minutes before adding the chopped tomatoes and half a tin of water to get all of the juices out
5 - Season with salt and pepper and stir in 1 tsp of oregano
6 - Cover and bring to the boil then simmer for 15 minutes
7 - Remove from the heat and allow to cool for 10 minutes before placing the vegetables in a blender and blitzing until smooth and mixing in half a teaspoon of oregano and a splash of balsamic vinegar according to taste
Once you have blitz your vegetables you now have the base for so many different meals!
This is such a flavoursome meal that can be used in so may ways. But, not only is it full of flavour, but it is also so good for you!
