Like many others, my children love pasta and spaghetti. It is such a quick and easy meal to prepare, therefore it is great for busy families to enjoy a lovely home cooked meal.
I know that sometimes it is just easier to grab a jar of sauce but you simply do not get the goodness that a cooked from scratch sauce gives you. Plus, for me, I love knowing exactly what my family are eating.
Today's recipe is for roasted red pepper and tuna sauce, but you can have it without adding the tuna. I added it to bulk it out a bit but also because the hubby asked me to add it in!
This meal is a sure winner and a great way to get added vegetables into the children without them knowing it!
This is what I did...
Roasted Red Pepper and Tuna Pasta Sauce
Ingredients
5 red peppers, cut into quarters
4 garlic cloves
2 lg tomatoes, cut into quarters
1 lg red onion
1 stick of celery, finely chopped
2 x 160g tins of tuna
2 tbsp olive oil
1 tsp oregano
Pasta
Method
1 - Heat the oven to 200C
2 - Place the peppers, whole garlic cloves and tomatoes in a roasting tin and drizzle with 1 tablespoon of olive oil
3 - Place in the centre of the pre heated oven and roast for 40 - 45 minutes or until the pepper skins are starting to blacken.
4 - Once they are ready remove from the oven and place in a plastic bag for 15 minutes. This allows the vegetables to sweat so that you can easily remove the skins from the peppers and tomatoes.
5 - Cook the pasta shapes or spaghetti as per instructions
6 - Heat the remaining olive oil in a pan and gently fry the onion and celery until soft
7 - Place the peppers, garlic, tomatoes, onions and celery in a blender along with the oregano and blitz until you have a smooth sauce
8 - Heat the tuna in the pan for a couple of minutes and pour over the sauce and gently heat for 5 minutes before serving
This pasta sauce can be enjoyed on a bed of pasta or, as the twins enjoy, all mixed together and baked with a little cheese on the top. If you do not like tuna, you can have it without or even try adding mince beef. This is such a versatile sauce it can be adapted to suit all tastes.
