Sausage Casserole with The Black Farmer

Do you follow a gluten free diet or live with someone who does? If so you will be interested to know that 9th - 15th May is Coeliac awareness week. During that week I will be sharing some gluten free recipes but when The Black Farmer got in touch about their gluten free sausages I thought I would get an early start!


It is believed that around half a million people suffer in silence with undiagnosed Coeliac disease. The Black Farmer brand was one of the first to get behind the gluten free industry 10 years ago. Being a totally gluten free brand they are urging people who suffer to get tested. It is estimated that one in every hundred people suffer with coeliac but only about a quarter of those have been diagnosed.

I only became aware of gluten free products after getting together with the hubby. He has a gluten intolerance, but thankfully does not have coeliac disease. Since I started eating gluten free products, particularly bread, I have noticed that I have felt less bloated and uncomfortable after eating gluten free bread. But it wasn't until I had to shop for gluten free foods I realised how many foods actually contain wheat. Even sausages! The Black Farmer produce a range of product that are all gluten free and RSPCA assured so you are not only guaranteed to be getting delicious products but you also know that the animals have been well cared for on their farm of origin.

Today I am going to share with you a delicious, slow cooked sausage stew. This dish is perfect for the colder evening and provides you with a bowl of pure comfort food!

This is what I did...


Slow Cooked Sausage Casserole

Ingredients

1 lg onion, chopped
3 carrots, chopped into chunks
2 Savoy cabbage leaves, shredded
1 leek, halved and sliced
100g peas
100g sweetcorn
1 x 400g tin chopped tomatoes
500mls water
1 veg stock cube
1 tsp sage

Method

Pre heat the oven to 160C

1 - Place all of the vegetables and sausages into a lidded casserole dish


2 - Pour over the water, chopped tomatoes and add the sage and stock

3 - Mix the ingredients together thoroughly, cover with the lid and place in the centre of the pre heated oven and cook for 4 hours. You can also use your slow cooker for this meal, just adapt the times accordingly.

4 - Before the casserole is ready peel and chop some potatoes and boil them until soft, you can either serve them as boiled potatoes or mash them up

5 - Once the casserole is ready stir thoroughly ensuring to scrape in some of the lovely, full of flavour caramelised bits around the top of the dish

6 - Serve with potatoes of your choice, snuggle up in the warm and enjoy!


When cooking a casserole you do not want to use any meat that is fatty as it makes your sauce fatty. These sausages from The Black Farmer were so lean and very little excess fat remaining after cooking.
