Mixed Spice and Cranberry Loaf

Two flavours that I love together are cranberries and mixed spices.
When I received a lovely jar of Steenbergs Organic Mixed Spice to bake with I knew exactly what I was going to bake.
Earlier in the Bake Off I made a couronne for the sweet bread challenge. So this time I thought would use these two delicious flavours in an enriched dough to make a Mixed Spice and Cranberry loaf, perfect for this time of year!
I used Paul Hollywood's Tea Loaf recipe out of the Great British Bake Off Everyday for the basics and just added my own twist!
 
Mixed Spice and Cranberry Loaf
 
Ingredients
 
400g strong white bread flour
1 1/2 tspn salt
40g caster sugar
40g unsalted softened butter
10g yeast
120ml warm full fat milk
120ml warm water
2tspn Steenbergs organic mixed spices
100g cranberries
50g Icing sugar to finish
 
Method
 
1 - Put the flour in a mixing bowl, place the yeast on one side and the salt, caster sugar, mixed spices, butter on the other
 
2 - Add the water and milk and mix together
 
3 - Once you have a rough dough remove from the bowl and knead on a well floured top
 
4 - Knead the dough until it is smooth and pliable, this is a lovely dough to work with and if you take your time to knead it you can feel the changes as you knead
 
5 - Place in a lightly oiled bowl, cover and leave to prove for about an hour or until doubled in size
 
6 - Add the cranberries and knock the air out of the dough
 
7 - Work the dough to distribute the fruit well
 
8 - Shape your dough into a ball and place on a baking tray lined with baking paper, place in a large plastic bag and leave to prove for another hour or until doubled in size
 
9 - Pre heat your oven to 200C/400F/Gas mark 6
 
10 - After the second proving, slash the top 2 or 3 times with a very sharp knife and place the dough into the oven and bake for about 20 minutes or until it is a lovely brown colour and sounds hollow when tapped on the bottom
 
11 - This loaf smells delicious once it is baked by resist the temptation to eat it hot! Leave to cool on a wire rack
 
12 - Once cooled take the icing sugar and add a little water so that you have an icing that will drizzle over
 
13 - Drizzle the icing over the loaf and leave to set
 
This loaf has such a deep flavour with the mixed spices and the sweetness that you get from the cranberries and the drizzled icing sugar.
This has got to be my best enriched loaf to date!
