This week I had some bananas that needed using, so what better way to use them than to bake a banana loaf!
I love how moist and sweet banana cake is.
This time I wanted to add a little extra to the cake.
This is what I got...
Banana, Walnut and Date Loaf
Ingredients
175g baking spread
175g light muscovado sugar
175g self raising flour
3 eggs, at room temperature
1/2 tsp vanilla paste
2 ripe bananas, mashed
50g chopped dates
50g walnuts, roughly chopped
Method
Pre heat the oven to 180C
1 - Mix the spread until smooth
2 - Add the sugar and mix together until light and creamy
3 - Gradually add the eggs with a little flour to prevent curdling
4 - Mix in the vanilla paste
5 - Sift in the flour and mix until all of the ingredients and evenly combined
6 - Fold in the bananas, walnuts and dates
7 - Place the mixture into a lined loaf tin and bake in the pre heated oven for 40 minutes, checking after 30 minutes and if the top is nicely browned cover with foil to prevent burning!
8 - Once baked through remove from the tin and leave to cool on a cooling rack
This cake is a deliciously moist cake. The added dates and walnuts give this cake some lovely extra flavours and textures!
It is perfect with a cup of tea!

DeleteI love banana loaf, and I've done it loads of time with walnuts too but never thought to try it with dates too, I think that would be lovely, thanks for sharing.
