Baileys Cheesecake from Sunrise Senior Living

Sunrise Senior Living are care homes that specialise in dementia care. I have previously written why dementia is a subject that is close to my families heart. If you did not see it you can read why in my Dementia Friends post. So when Sunrise Senior Care got in touch and asked me to try one of their recipes I could not refuse!

Sunrise have published some deliciously tasty and nutritious recipes that are not just great for the elderly but for the whole family.

I decided to try out their Baileys Cheesecake recipe.

This is how I got on...



Baileys Cheesecake (recipe courtesy of Sunrise Senior Living)

Ingredients

Base

150g digestive biscuits
75g unsalted butter
1 tsp caster sugar

Filling

75ml Baileys Irish Cream liqueur
500g cream cheese
100g caster sugar
100ml double cream
4 eggs

Method

1 - Line a 20cm springform tin and grease the sides

2 - Blitz the digestive biscuits, butter and sugar in a food processor until evenly combined

3 - Press the mixture in the base of the tin and refrigerate until set

4 - Preheat oven at 180˚C/fan 160˚C/gas mark 4

5 - Mix the cream cheese, sugar, double cream, eggs and Baileys liqueur using an electric hand mixer

6 - Mix until smooth

7 - Pour the mixture evenly over the digestive base

8 - Bake for 40 minutes

9 - When the cheesecake is almost set turn off the oven and leave to cool in the oven for 15 minutes

10 - Remove the cheesecake from the oven and place in the fridge for at least 30 minutes before serving

This cheesecake was amazing!

I will admit to never baking a cheesecake before, I normally go for the easy non bake ones, but this dessert was so creamy, light and really was simple to make. The hints of Bailey's that come through the smooth creamy topping made this dessert simply heaven on a plate! From now on I will definitely be making more baked cheesecakes.
