Roasted Mediterranean Vegetables and Beef Pasta - Family Favourites

If you are a regular reader you will know how pasta is a huge hit in our house. I love how easy pasta meals are to make and the family always enjoy eating them, especially the children! I find that a pasta sauce is idea for hiding vegetables in. The children always seem to eat it all when it is in a pasta sauce.

For this weeks Family Favourites I am sharing a pasta dish which uses roasted vegetables. When cooking with roasted vegetables I find that the dish always has a greater depth of flavour than when they have been pan fried.

This recipe is great for when the kids are at home as you simply prepare the vegetables and leave to roast for 45 minutes which gives you extra time to be with the kids!

This is what I did...


Roasted Mediterranean Vegetables and Beef Pasta

Ingredients

2 courgettes, sliced and quartered
1 red onion, thickly chopped
1 red pepper, cut into chunks
1 yellow pepper, cut into chunks
4 garlic cloves
200g mushrooms, sliced
1 onion, chopped
450g lean minced steak
2 400g tins of chopped tomatoes
2 tsp dried oregano
1 tbsp olive oil
Pasta

Method

1 - Pre heat the oven to 200C

2 - Place the courgettes,red onion, red pepper, yellow pepper and whole garlic cloves in a roasting tin, evenly drizzle over 1 tbsp of olive oil and sprinkle over 1 tsp of dried oregano

3 - Place in the centre of the pre heated oven and roast for 45 minutes

4 - Once the vegetables are ready remove from the oven and leave on one side until they are needed

5 - Dry fry the lean minced steak in a large sauce pan with the onion and mushrooms

6 - Once the meat has been browned off add the roasted vegetables along with any of the juices that are in the roasting tin

7 - Cook for five minutes

8 - Add the chopped tomatoes and 1 tsp of dried oregano and bring to the boil

9 - Simmer for 10 minutes

10 - While the sauce is simmering cook the pasta as per instructions

11 - Once the meat is thoroughly cooked and the tomato juices have reduced down, remove from the heat and serve


This delicious, flavoursome pasta sauce can be served as pictured, on a bed of pasta, or it can be mixed in with the pasta and baked with some grated cheese on the top! It is such a versatile sauce, it could even be used to make a yummy lasagne! However you decide to serve it you can guarantee that it will be enjoyed by the whole family.
