Weekly Meal Plan - Week Commencing 6th July 2015

Last week we enjoyed being able to eat al fresco. It was such a glorious week!

I have recently bought a meat box that should last us for the next 4 weeks. So I now have a freezer full of different meats, I feel spoilt for choice!

Anyway, back to meal planning, this is what we are going to enjoy this week...

Week Commencing 6th July 2015

Butternut Squash Risotto

Today I am planning to make a butternut squash risotto with arborio rice, red onions, celery, mushrooms and garlic.

Minted Lamb Chops

Last week I received some meat to review. Inside the box were various meats including lamb chops which I have not cooked in such a long time! On Tuesday I will be cooking them with fresh mint and served with minted new potatoes and vegetables.

Vegetable and Lentil Shepherds Pie

We love lentils but do not have them enough. So this week I am going to replace the mince meat that I usually use in my shepherds pie with lentils for a vegetarian version of a much loved meal.

Roasted Red Pepper Pasta

This week I am cooking some meals with "trigger" foods to test the hubby's acid reflux. In the past red peppers have been a trigger so what better way to test it than with a delicious roasted red pepper sauce.

Fish Friday

I am planning to buy some fish at the end of the week but as of yet I am not too sure what I will be getting.

  1. That risotto sounds really good! I love butternut squash, misery guts doesn't though, so we don't have it often (we still have it though :D). Same with lamb, lamb is banned because they're cute...they taste mighty fine too! :D If we ever eat out I pretty much always order lamb :)

    Had a nose at those Sweetpea baking mixes, they sound really good and not full of the typical rubbish in mixes. I always view packet baking mixes as blashpemy :D but they do sound nice and healthy and for people with little time on their hands a good idea.
