Smoked Fish Bake - Family Favourties

Fish has always been a favourite of mine and I love finding new ways to add more to our diets. The down side of wanting to eat more fish is the expense. I think that fish has certainly got more expensive. That is why I always keep an eye out in the supermarkets reduced section as the majority of the fresh fish can be frozen. It is also a great way to get stocked up. The other week when we were out I found a lot of fresh smoked fish reduced.

That is how this meal came about.

I had some lovely smoked salmon and smoked cod and wanted to make a dish that would be both easy and one that the whole family would enjoy.

This is what I did...


Smoked Fish Bake

Ingredients

2 smoked cod fillets
2 smoked salmon fillets
750g new potatoes, quartered
1 aubergine, quartered and sliced
2 courgettes, quartered and sliced
1 onion, chopped
100g broad beams
2 tsp fresh parsley, chopped
1 tbsp olive oil

Method

1 - Heat the oven to 200C

2 - Place the cod and salmon fillets in a roasting tin with the aubergine, courgettes and onion and drizzle the oil over the top


3 - Place in the centre of the pre heated oven and bake for 15 minutes

4 - Bring a pan of water to the boil and simmer for 10 minutes

5 - Add the drained potatoes and chopped parsley to the roasting tin and return to the oven for 10 minutes ensuring they are covered in the oil

6 - 5 minutes before the fish is ready boil a pan of water and simmer the broad beans for 3 minutes then drain

7 - Remove the fish from the oven, add the broad beans and serve


This is such an easy meal to prepare and cook. Perfect for while the children are off school and you want to spend less time in the kitchen.
