Cranberry, Coconut and Chia Seeds Oat Bites

One food that I love most at this time of year has to be the cranberry. I adore the sharpness of the fresh berries and they go perfectly in bakes.

This bake has evolved from the healthier Slimming World Baked Oats recipe. But when I made them, both the hubby and I agreed that there was something missing. So I reduced the milk, increased the oats and added some sweet extras. They may not be SW friendly but they are so moreish! You will not be able to stop at just one piece!

This is what I did...

Cranberry, Coconut and Chia Seeds Oat Bites

Ingredients - makes 8 bites

120g oats
1 lg egg
50mls milk
2 tbsp dessicated coconut
2 tbsp chia seeds
50g fresh cranberries, halved and quartered
3 tbsp golden syrup
1 1/2 tsp mixed spice

Method

1 - Pre heat the oven to 200C

2 - Place the oats, desiccated coconut, chia seeds and mixed spice in a mixing bowl and thoroughly combine together

3 - Beat the egg and stir in the milk

4 - Add the egg and milk mixture and the golden syrup to the dry ingredients and mix together

5 - Mix in the fresh cranberries

6 - Using either a small, lined baking tray or a small square silicone baker spoon in the oat mixture

7 - Flatten out the mixture and place in the centre of the pre heated oven for 15 to 20 minutes or until thoroughly baked and golden

8 - Once baked remove from the baking tray or silicone baker and cool on a cooling rack


These oat bites are full of festive flavours from the mixed spice and the fresh cranberries. The fruits give the bites a tangy hit of deliciousness!

  1. These sound delicious and clearly it doesn't matter that they're not too SW friendly as you seem to have done amazingly on SW despite eating these!
