The Perfect Cake for Comic Relief and Mum

This week we have two big events coming up. On Friday people all over the country will be coming together to raise much needed funds for Comic Relief. Then on Sunday we will be celebrating mums. So when I had to decide which topic to focus on for this weeks Aldi post I thought why not combine the two! This cake recipe will create a fantastically fun cake for Comic Relief by simply adding a red nose. Or you can leave the nose off and treat your mum on Mothering Sunday.


If there is one foodie treat that your mum is sure to love this Mothering Sunday it has to be a traditional afternoon tea. However going out for afternoon tea on mother's day can be expensive, not to mention busy. Thankfully you can easily recreate afternoon tea at home with the help of these great Mother's Day offers available in Aldi.

Of course to go with this lovely set you are going to need some delicious food. Today I am going to help you with the cake but for more inspiration visit Aldi's recipes page!

Now back to cake! This is what I did...


Perfect Comic Relief and Mother's Day Cake

Ingredients

eggs
1tsp vanilla essence
Glacier cherries
Red sprinkles
Red food colouring

Method

Pre heat the oven to 180C

1 - Mix together the baking spread and caster sugar until light and creamy

2 - Add the eggs one at a time with a little flour to prevent curdling and the vanilla essence

3 - Mix in the remaining flour and beat until you have a smooth cake batter

4 - Line and grease a round cake tin and spoon in 2/3 of the cake batter

5 - With the remaining cake batter add the red food colouring until you have the desired shade

6 - Spoon in the red cake batter and using a fork swirl the red batter into the cream coloured cake mix

7 - Place the tin in the centre of the pre heated oven and bake for 30 minutes

8 - Once the cake is baked, remove from the tin and allow to cool thoroughly before icing

9 - Once the cake has cooled prepare the icing by adding water, one teaspoon at a time until you have the desired consistency. I used 3 teaspoons of water.

10 - Pour the icing over the cake

11 - Decorate the top of the cake with glacier cherries around the edge and add the sprinkles


If you are making the cake for Comic Relief simply place a couple of cocktail sticks into the bottom of a red nose and stand on the cake. If you are making this cake for mum leave the red nose off!


This cake is light and fluffy and with the crisp of the dried icing this cake will keep everyone coming back for more!

    I totally misunderstood your instructions for a second though...

    I wondered momentarily whether this was a Comic Relief thing, where people were standing on their cakes to raise money for Red Nose Day!

    And then I realised...
