Moussaka Style Cottage Pie

This recipe came along by accident. It was meant to be a moussaka but the summer holidays took over and I simply did not have time to bake it. That is why it became a moussaka style cottage pie and if I am totally honest it was even better than the original plan. This meal resulted in clean plates all round and even requests for seconds!

I have found that if I remove the skin of the aubergine before I cook it the children will eat it. When I have cooked it in the past with the skin on none of them have eaten it. So if you have anyone that will not eat aubergine remove the skin and they will never know!

This recipe was supposed to be yesterdays Family Friendly recipe. Over the next few weeks I am not going to be posting as regularly as normal, like most families, I am busy with the children all being at home!

This recipe is now going to be added to one of our favourites. This is what I did...


Moussaka Style Cottage Pie

Ingredients

500g minced lamb
1 aubergine, skin removed and cut into small cubes
1 lg onion, chopped
200g mushrooms, halved and sliced
3 med carrots, quartered and sliced
1 400g tin of chopped tomatoes
1 tsp cinnamon
1 tsp oregano
300 mls lamb stock
750g potatoes, chopped
50g mature cheddar cheese, grated

Method

1 - Place the chopped potatoes in a pan of water, bring to the boil and simmer until the potatoes are soft

2 - In a deep saute pan dry fry the lamb mince with the onions for 10 minutes

3 - Add the carrots, aubergine and mushrooms and fry for a further 5 minutes, stirring frequently

4 - Season the meat with the cinnamon and oregano before pouring over the chopped tomatoes

5 - Mix thoroughly before pouring over the lamb stock, bring to the boil and simmer for 20 minutes

6 - Drain the potatoes and mash

7 - Place the lamb mixture into a casserole dish, cover with the mashed potato and top with the grated cheese

8 - Place under a high grill until the cheese has melted and has started to brown and serve


This is such a delicious meal and transform a two meals, both classic moussaka and cottage pie have been given a make over! This dish is full of flavours and will be a success with the whole family!
