This is a delicious, non bake, quick to make cheesecake.
When I was looking at cheesecake recipes they all seemed to require over night chilling, baking or both.
I wanted a cheesecake that could be made quickly, in advance but ready on the same day!
As I wanted this to be a quick cheesecake to make I decided to serve it in individual glasses. This means that the cheesecake doesn't have to be completely set but also looks great when serving guests!
This is what I came up with...
Chocolate Raspberry Cheesecake
Ingredients
200g digestive biscuits
250g macarpone
160g Philadelphia soft cheese with Cadburys
3tbsp icing sugar
40g non salted butter, melted
Raspberries
Method
1 - Put the macarpone in a bowl and mix with a spoon until softened
2 - Add the chocolate soft cheese and mix together until evenly combined
3 - Add the icing sugar and mix
4 - Place the digestive biscuits in a bag, tie and beat with the end of a rolling pin until roughly broken
5 - Pour the melted butter over the crushed biscuits and mix in
5 - Take the individual glasses and divided equally the biscuit base, this recipe will make 4 - 6 depending on the size of your glasses
6 - Next spoon on a layer of the chocolate mix
7 - Complete the cheesecake with a layer of raspberries
8 - Place in the fridge for at least 2 hours before serving
This is such an easy, quick dessert that will pleased everyone.
The sharpness from the raspberries goes perfectly with the sweetness from the chocolate.
If you do not like raspberries, replacing them with strawberries will also be delicious.
Joseph enjoys his with slices of banana, it really can be adapted to personal taste!

Yummy! That looks delicious. Cheesecake is one of my favourites anyway but with chocolate and raspberries added in too it has to be a winner!
