Well Done Celebration Chocolate Cake

Like all year 6 children J sat his SATS last week. The week started off well, he seemed to be calm but toward the end of the week the stress started to show. This got me thinking how to cheer him up? What better way to cheer up an 11 year old boy than chocolate cake.

When I say chocolate cake, I mean the king of chocolate cakes!

This cake was a huge success and is perfect for any celebration cake for any chocolate lover!

This is what I did...

Well Done Celebration Chocolate Cake

Ingredients

200g butter
200g Tate and Lyle golden caster sugar
175g self raising sugar
25g cocoa powder
4 eggs
4tbsp Tate and Lyle golden syrup
100g butter room temperature
200g Tate and Lyle icing sugar
15g cocoa powder
100g dark baking cocoa 85% solids
Mini marshmallows
Chocolate stars


Method

1 - Pre heat the oven to 180C, line and grease 2 sandwich tins

2 - Mix together the butter and golden caster sugar until light and creamy

3 - Add the eggs, one at a time, with a little flour to prevent curdling

4 - Mix in the remaining flour and cocoa powder along with the golden syrup

5 - Divide the mixture between the sandwich tins and place in the centre of the pre heated oven and bake for 25 - 30 minutes or until thoroughly baked

6 - Once thoroughly baked leave to cool in the tins for 10 minutes before removing and leaving to cool on a cooling rack

7 - Once the cakes are completely cooled prepare the butter icing by creaming the butter and gradually adding the icing sugar and the cocoa powder

8 - Spoon the butter icing into a disposable icing bag and snip off the end

9 - Pipe even sized balls of butter icing starting in a circle around the edge of the first cake and gradually move to the centre

10 - Place the second cake on the top and pipe an edge of butter icing around the top of the cake

11 - Melt the chocolate in a glass bowl over a pan of boiling water

12 - Once melted pour on top the centre of the top cake, the butter icing will be a barrier to stop it running over the edges

13 - Scatter over the mini marshmallows and decorate with the chocolate stars then enjoy!



This chocolate cake has to be the best chocolate cake that I have made. The addition of the Tate and Lyle golden syrup left the cake moist and light and so full of taste!


The chocolate cake certainly did the trick and cheered J up and it was the perfect way to end a stressful week. After the success of the cake it will become a favourite recipe for future celebration cakes!
