Tuna Steak with Courgette Noodle Stir Fry - Family Favourites

I have recently bought a spiralizer. After seeing so many good reviews I decided to go ahead and get one. I have been looking forward to making vegetable noodles and spaghetti.

This week I am sharing a recipe that uses the spiralizer to make courgette noodles. They are a delicious and healthier alternative to traditional noodles.

This meal is not only extremely healthy but quick and easy to make.

Tuna Steak with Courgette Noodle Stir Fry

Ingredients - serves 4

4 tuna steaks
4 courgettes, made into noodles
2 yellow peppers, chopped
250g tender stem broccoli, thickly sliced
12 baby sweetcorn, thickly sliced
1 red onion
12 French beans, chopped
2 tbsp tamari sauce
2 tbsp olive oil

Method

1 - Heat 1 tablespoon of olive oil in a large frying pan and gently fry the tuna steaks

2 - While the tuna steaks are cooking heat the second tablespoon of olive oil in a wok over a high heat

3 - Once the oil is at a high heat add the onions, yellow peppers, tender stem broccoli, baby sweetcorn and french beans

4 - Cook for 5 minutes stirring regularly

5 - Add the courgette noodles and cooking for a further 5 minutes

6 - Drizzle over 1 tablespoon of tamari sauce over the stir fry vegetables and the second over the tuna steaks

7 - Heat for a further minute before serving


Serve the tuna on a bed of the stir vegetables. The vegetables are so rich in flavours and with the addition of the tamari sauce and the tuna, it is a truly delicious meal.
