Last week I cooked a bean stew. I was confident that the hubby and I would enjoy it, however I was not sure what the children's reaction would be. Thankfully it was a huge success. They even had the leftovers the following day.
This is a tasty, healthy meal that has become a family favourite!
Bean and Vegetable Stew
Ingredients
1 fennel, trimmed and sliced
1 medium aubergine/eggplant, chopped
1 medium red onion, chopped
1 medium brown onion, chopped
2 celery sticks, chopped
1 carrot, cubed1 medium head of broccoli, cut into small florets
400g tin of blackeye beans
400g tin of chickpeas
750mls vegetable stock
2tsp mixed herbs
1tbsp balsamic vinegar
1tbsp olive oil
Method
1 - Heat the olive oil over a medium heat and add the fennel, onions, celery and carrots
2 - Cook the vegetables for 10 minutes
3 - Add the broccoli and aubergine to the vegetables and mix
4 - Pour over the vegetable stock, add the blackeye beans, chickpeas and mixed spices and bring to the boil
5 - Simmer for 15 minutes
6 - Once the stew is ready stir in the balsamic vinegar and serve
This meal is delicious as a main meal or even as a side dish. It is packed with vegetables and full of flavour. Not only is this a delicious meal but it is also full of goodness for the whole family.
