Baked Salmon and Fennel

Salmon is such a versatile fish that can be combined with so many flavours to create tasty dishes.

Salmon can be cooked in a variety of ways. It can be pan fried, grilled, barbecued, poached and baked.

This recipe is using one of my favourite ways to cook salmon. Baked in wrapped in foil. This is not only an easy way to cook salmon but I also find that when the fish is wrapped in baking paper and foil, as it steams cooks, the fish really absorbs any additional flavours that you add.

This recipe combines salmon with fennel and lemon. I love the aniseed flavours that mellow out as the fennel is cooked but still lightly linger in the salmon.

This is what I did...

 


Baked Salmon and Fennel

Ingredients - per serving

Salmon fillet
2 lemon slices
1/4 fennel bulb, finely chopped
1tsp butter

Method

1 - Heat the oven to 180C

2 - Lay a sheet of kitchen foil on the work top and cover with a sheet of baking paper

3 - Place the finely cut fennel down as a based for the salmon to sit on

4 - Place the salmon on top of the fennel and top with the lemon slices and butter


5 - Pull the sides of the baking paper and foil together and crimp at the top to create a parcel

6 - Place in the centre of the pre heated oven and bake for 10 - 12 minutes

7 - Once cooked carefully open the parcel being careful of steam escaping and serve


This easy salmon dish is so flavoursome and can be served with a variety of foods. Try serving with stir fry, rice, potatoes, vegetables or salad.
