Easter Rock Cakes

Having a long weekend is the perfect time to bake with the children.

Joseph loves getting in the kitchen with me but we simply do not always have the time. I usually do my baking while he is busy at school. But we have started the long weekend with a bit of Easter themed baking.


We have made some Easter style rock cakes. Rock cakes are a great easy recipe for children to make. A great recipe for them to get their hands in quite literally!


We have replaced the traditional ingredient of dried fruit with a more yummy, Easter ingredient. Chocolate! Well chocolate mini eggs to be precise!

This is what we did...


Easter Rock Cakes

Ingredients

250g Self raising flour
75g Caster sugar plus a little extra for dusting
75g Butter, cubed
2 Eggs
75g Mini eggs

Method

Pre heat the oven to 180C

1 - Place the flour in a large mixing bowl and add the butter

2 - Rub the butter into the flour with your hands until you have a breadcrumb consistency

3 - Add the eggs, sugar and mini eggs and mix together with a spoon or as I always find easier with your hands!

4 - Form 12 rock cakes with the mixture and place on a lined baking tray

5 - Place in the centre of the pre heated oven and bake for 15 minutes

6 - Remove from the oven and transfer to a cooling rack to cool down


This is such an easy, fun recipe for children to make. Joseph loved getting his hands in! If you do not like chocolate mini eggs or want to make some that are a bit healthier, substitute the mini eggs for dried fruit.
