White Chocolate and Raspberry Cake

White chocolate and raspberry really is fantastic combination.

The richness from the white chocolate paired with the bitterness of the raspberries guarantee you will keep wanting more!

My White Chocolate and Raspberry Cake is perfect for all of the family and ideal to serve up to guests as an impressive sweet treat!

This cake is also a great way to use up any leftover white chocolate from Easter eggs!

This is what I did...

White Chocolate and Raspberry Cake

Ingredients

200g self raising flour
200g butter, at room temperature
200g caster sugar
4 eggs, at room temperature
400g good quality white chocolate
3tbsp freeze dried raspberries

Method

Pre heat the oven to 180C

1 - Mix together the butter and caster sugar until light and creamy

2 - Gradually mix in the eggs along with a little flour to prevent curdling

3 - Mix in the remaining flour until you have a smooth mixture then stir in 2 tablespoons of the raspberries

4 - Place 200g white chocolate in a glass bowl over a pan of boiling water, ensuring that the water does not touch the base of the bowl

5 - As the chocolate starts to melt stir well, when the majority of the chocolate has melted remove the bowl from the heat and continue stirring until it has all melted

6 - Pour the melted chocolate into the cake mixture and stir


7 - Pour the cake mixture into a prepared cake tin and place in the centre of the pre heated oven and bake for 50 minutes or until the cake is thoroughly baked

8 - Once baked leave to cool in the tin for 10 minutes before removing and allowing too cool completely on a cooling rack

9 - To decorate the cake melt the remaining 200g of white chocolate as before and simply drizzle over the cake and sprinkle over the remaining raspberries

10 - Leave the chocolate to set just slightly before serving


The melted chocolate makes this a deliciously moist cake that is full of the rich creamy flavours from the white chocolate. As you bite through the cake you discover little pieces of tangy raspberry that compliment the chocolate perfectly.


This cake will definitely keep you wanting more and more!
