Isabella's Spaghetti - Family Favourites

This week I am sharing a Family Favourite that is actually Isabella's favourite. Hence the name, Isabella's Spaghetti! However it could also be called my hidden veg pasta sauce as it is full of vegetables and you would never know!

This sauce is a great way to get some added vegetables into your families diets without them realising it! Not only is is full of goodness but is also such a quick and easy sauce to make which fits in perfectly with busy lives!

This is what I did...

Isabella's Spaghetti

Ingredients

1 medium onion
2 carrots
1 courgette
1 red pepper
250g chestnut mushrooms. chopped
2 tins chopped tomatoes
250g pork mince
250g beef mince
1tsp oregano
1 beef stock cube
250g spaghetti

Method

1 - Place the roughly chopped carrots, courgette, onion and red pepper in a food processor and blitz until finely chopped

2 - In a large pan or saute pan over a medium, high heat cook the pork and beef mince for a couple of minutes until it starts to brown off

3 - Stir in the finely chopped vegetables and cook for 5 minutes

4 - Add the chopped mushrooms and cook for a further 5 minutes

5 - Pour over the chopped tomatoes, add the oregano and beef stock

6 - Stir all of the ingredients together and bring to the boil

7 - Simmer for 20 minutes, allowing all of the flavours to combine together

8 - While the sauce is simmering cook the spaghetti as per instructions


This pasta sauce is full of goodness and the kids will not be able to tell. If yours do not like mushrooms these can also be added to the food processor and chopped finely.
