Leftover Turkey Bake

When I was clearing out my freezer last week I found one last piece of leftover turkey breast. You will probably know how much I love using leftover meat in new meals. I often find that when the meat is cooked for a second time it is a lot more flavoursome!

Today's recipe is a great way to increase the amount of vegetables in your meals. If you are following the Slimming World plan this is a delicious free from meal and is full of speed vegetables and protein! Turkey is also a super low fat meat!

This is what I did....


Leftover Turkey Bake

Ingredients

Leftover turkey, diced
6 carrots, cut into sticks
1 medium broccoli
2 leeks, sliced
1 fennel, trimmed and sliced
2 beetroot, cut into sticks
200g chestnut mushrooms
Spray oil

Method


1 - Heat the oven to 200C


2 - Place all of the vegetables except for the broccoli into a roasting tray and spray with olive oil

3 - Place in the pre heated oven and bake for 20 minutes

4 - Simmer the broccoli in a pan of boiling water for 5 minutes

5 - Add the broccoli and the diced turkey to the roasting tin, spray with a little extra olive oil and return to the oven for a further 15 minutes


This bake can be served as it is or with some new potatoes on the side. Either way this is a super healthy meal which everyone will love!
