Peanut Butter Cake

I love peanut butter and jam.

I love the savoury taste of the peanuts combined with the sweetness of the jam. So what better flavours to combine in a peanut butter cake!

The peanut butter gives the cake a lovely stodgy texture that any peanut butter fan will love!

This is what I did...

Peanut Butter Cake

Ingredients


200g baking spread
200g golden caster sugar
200g self raising flour
25g ground almonds
4 eggs
4 tbsp smooth peanut butter
4 tbsp almond yogurt (I used Alpro dairy free yogurt)

Filling and Topping

3 dsp strawberry jam
3 dsp smooth peanut butter
3 dsp almond yogurt
100g honey roasted peanuts

Method

Pre heat the oven to 200C/180C fan/Gas Mark 6

1 - Mix together the baking spread and caster sugar until light and creamy

2 - Mix in the smooth peanut butter and almond yogurt

3 - Gradually add the eggs, one at a time with a spoon of flour to prevent curdling

4 - Add the remaining flour and ground almonds and mix until you have a smooth mixture

5 - Line and grease two sandwich tins and divide the cake mixture between the two

6 - Place the tins in the centre of the pre heated oven and bake for 45 minutes or until the cakes are thoroughly baked, then remove from the oven

7 - Leave the cakes to cool in the tins for about 10 minutes before removing and allowing to cool completely on a cooling rack

8 - Once the cakes are completely cooled you can begin building the cake

9 - Place the strawberry jam in a bowl and mix to loosen up the consistency, then thickly spread on the base cake and top with the second cake

10 - Prepare the topping by mixing together the smooth peanut butter and the almond yogurt until you have a smooth frosting consistency

11 - Spread over the top of the cake and sprinkle over the honey roasted peanuts


If you love peanut butter this is an ideal cake for you! The peanut butter makes a stodgy sponge but combined with the sweetness from the strawberry jam it works so well.


I used honey roasted peanuts on the top but if you prefer you can use plain unsalted nuts, but the honey roasted ones add that extra bit of flavour.

  2. Big fat WANT. Ice had in my mind now for a while to do a cake like this but alas it has never happened at home and there are several people in my office who don't like peanut butter so I can't do it for there. I know, people who don't like peanut butter!!
