Easy Ramiro Pepper Pasta with Minute Steak - Family Favourites

Like many families, my lot love pasta! It is always a winning meal all round. They enjoy their meal and for me it is a quick and easy meal to prepare.

This week I am sharing a lovely, tasty recipe which I often make for the twins at lunch time. Whenever I serve them this for lunch I get two clean plates back!

In this recipe I am using some minute steaks that have been supplied by Myprotein.com who have recently opened a fresh meat section on the online website. A review of their site, services and meats will be coming soon!

Easy Red Pepper Pasta with Minute Steak

Ingredients - Serves 4 - 5

300g pasta
1 red ramiro pepper, sliced
1 lg red onion, chopped
8 baby courgettes, sliced
400g tomato passata
1tsp oregano
4 minute steaks
1 Knorr beef stock cube
2tsp extra virgin olive oil

Method

1 - Cook the pasta as per instructions

2 - Lightly oil a frying pan and gently fry the red onions, ramiro peppers and the baby courgettes until starting to soften

3 - Pour over the tomato passata and stir in the oregano

4 - Bring the sauce to the boil and then simmer for 5 minutes

5 - Once the pasta is cooked al dente drain the water and return to the pan

6 - Pour the sauce over the pasta and mix thoroughly and leave over a low heat

7 - Mix the Knorr beef stock cube with the olive oil to create a smooth paste

8 - Lightly rub the paste over the steaks, this will prevent the steaks from drying out and will add extra flavour (this is a tip that I was given from Marco Pierre White!)

9 - Heat a large frying pan over a medium high heat and dry fry the minute steaks for 30 seconds on each side

10 - Remove the frying pan from the heat and leave the meat to rest for a few minutes



Serve the minute steaks sliced on a bed of the ramiro pepper pasta. For smaller children chop the steak into smaller bite sizes.

The flavours from the ramiro peppers and tomatoes go perfectly with the steak. This meal will be a winner with the whole family!
