Cheap Budget Meal - Chorizo and Mushroom Pasta

One of my favourite meats to cook with and eat has to be chorizo.

Using chorizo in dishes adds such a great depth of flavour. With chorizo, I rarely add any other spices thanks to the paprika that it contains.

This weeks Cheap Budget Meal is not only great for when you are cooking on a budget but also fantastic if you are short on time. This is such a flavoursome meal that can be cooked in 20 minutes.

Here is this weeks Cheap Budget Meal recipe...


Chorizo and Mushroom Pasta

Ingredients

170g chorizo ring (£2)
150g button mushrooms, halved or quartered depending on size (65p)
1 red onion, sliced (19p)
300g pasta (29p)
Fresh basil leaves
1tbsp olive oil


Method

1 - Cook the pasta as per instructions.

2 - Heat  the olive oil in a frying pan and add the chorizo, mushrooms and onions and cook over a medium heat for 15 minutes.

3 - Once the pasta is cooked, drain and return to the pan.

4 - Add the chorizo, mushrooms and onions to the pasta, also adding any of the flavoursome oils that are in the pan.

5 - Heat on a medium heat for 5 minutes. This will allow any oils and flavours to coat the pasta

6 - Just before serving add a handful of fresh basil leaves


This is a deliciously light, Mediterranean inspired pasta dish which is perfect for a hot summers day.

I cooked this meal for just £3.13, that is a budgeting 63p per serving!

  1. Sounds great! Usually have all ingredients so will give a try next time I forget to leave out the meat from freezer, which is very often woops!! :)
