A Delicious Meal with Giovanni Rana

When I saw that Foodies100 and Giovanni Rana were running a competition I knew I had to join in. Italian food and pasta is a real family favourite in our house. Not only are pasta dishes delicious but they are also quick and easy meals to make.

Giovanni Rana's Italian Indulgence and Simply Italian fresh pasta has made it even easier to achieve restaurant style meals at home. They include a wide range of the most popular Italian flavours. From Bolognese to Italian Cheeses, from Spinach and Ricotta to Chicken and Mozzarella with Smoked Pancetta. There are flavours to suit every taste. The pasta is so quick and easy to prepare. You simply simmer in boiling water for just 1 minute and serve as desired.

I am going to share 2 sauce recipes that I have created to go with the Giovanni Rana Simply Italian range and the Italian Indulgence range. These sauces are just as easy to make and full of flavour!


 This is what I did...

Giovanni Rana Simply Italian Chicken and Mozzarella with Smoked Pancetta
or Giovanni Rana Italian Indulgence Succulent Chicken with Rosemary
with Wild Mushroom Sauce
Giovanni Rana Simply Italian Rich Bolognese or
Giovanni Rana Italian Indulgence Sun Ripened Tomato, Sliced Olives and Mozzarella
with Tomato, Basil and Garlic Sauce
Wild Mushroom Sauce

Ingredients

1 Giovanni Rana Simply Italian Chicken and Mozzarella with Smoked Pancetta or Giovanni Rana Italian Indulgence Chicken with Rosemary
6 spring onions, sliced
100g wild mushrooms
2 cloves of garlic, crushed
2tbsp soft cream cheese
Truffle oil
Grated fresh truffle

Method

1 - Heat 2 teaspoons of truffle oil in a small frying pan

2 - Fry the spring onions for 5 minutes

3 - Add the crushed garlic and fry for 2 minutes

4 - Add the wild mushrooms to the pan and cook for 5 minutes, stirring regularly

5 - Mix in the soft cream cheese until melted into a sauce and turn off the heat


6 - Place the Giovanni Rana pasta in a pan of boiling water for just 1 minute and drain

7 - Serve the pasta, topped with the wild mushrooms and grate on fresh truffle

I have chosen mushrooms to go with this pasta as they go hand in hand with the chicken flavours. The truffle adds the perfect finishing touch to the meal.


Tomato, Basil and Garlic Sauce

Ingredients

1 Giovanni Rana Simply Italian Rich Bolognese or Giovanni Rana Italian Indulgence Sun Ripened Tomatoes, Sliced Olives and Mozzarella
1/2 red onion, chopped
2 garlic cloves
Handful of fresh basil, roughly chopped
250g chopped tomatoes
Olive oil
Parmesan shavings

Method

1 - Heat 2 teaspoons of olive oil in a pan

2 - Add the onions and cook for 5 minutes

3 - Add the crushed garlic and cook for 2 minutes

4 - Stir in the chopped tomatoes and the fresh basil, bring to the boil and simmer for 5 minutes


5 - Place the Giovanni Rana pasta in a pan of boiling water for just 1 minute and drain

6 - Pour over the tomato sauce and mix into the pasta and serve with Parmesan shavings and a sprig of basil

I have chosen a simple sauce to accompany these rich pastas as they deliver great flavours so a heavy sauce is not needed.
