Baked Apple Oat Crumble

Who doesn't love a good pudding? When eating healthy you can also enjoy delicious puddings they just need to be made in a healthier way by changing a few ingredients for more naturally sweet ingredients.

One pudding that we always enjoy has to be a good old crumble. But crumbles are not the healthiest of puddings. The crumble topping consists of a lot of butter and sugar. So I decided to make a healthier version of a much loved classic and it was a huge success! This pudding is now a firm favourite that we will definitely be enjoying again and again.

This is what I did...

Baked Apple Oat Crumble

Ingredients - Serves 2

2 Bramley apples, peeled and chopped
100g flame raisins
1tsp cinnamon
100mls water
1tbsp Clarks Carob fruit syrup (this was received in January's Degustabox)
50g porridge oats
25g coconut oil
1tbsp maple syrup
Mixed seeds

Method

Pre heat the oven to 150C

1 - Place the chopped apples, raisins, cinnamon, water and carob fruit syrup into an oven proof dish with a lid

2 - Place the covered dish into the pre heated oven and bake for 1 hour. This will allow the flavours to combined together perfectly

3 - After an hour remove the dish from the oven and stir

4 - Transfer the baked apples into two individual, oven proof serving dishes

5 - Place the oats in a mixing bowl and add the coconut oil

6 - Rub together the oats and coconut oil until they are combined evenly. I found it easier to prepare with my hands but use a spoon if you wish

7 - Pour over the maple syrup and stir

8 - Divide the coconut oats between the two dishes to top the apples

9 - Scatter over some mixed seeds, amount can vary to taste and place back in the oven and bake for 20 minutes



This pudding was so full of natural flavours and sweetness. I served ours with a scoop of vanilla ice cream on the top and it finished it off perfectly. The ice cream, melting into the oats and apples, made this a pudding a huge success.

  9. Mmmm sounds delicious and so much healthier than regular a crumble (although I'd probably undo that with a big dollop of vanilla ice-cream on top!).
