Pancake Day is Coming!

Next Tuesday is one of the children's favourite foodie days. Next Tuesday is Shrove Tuesday, Pancake Day!

So when Aldi asked me if I would like to share our favourite fillings I knew that I wanted to make this years pancakes healthier than normal. We usually have pancakes with chocolate spread or lemon juice and sugar. I know it is only once a year, but we have hugely reduced our sugar intake and do not want to have pancakes filled with sugar this year!

This year I want to move away from the usual lemon juice and sugar and go for a healthier sweet filling. I have also made a savoury pancake topping which the twins loved! I am going to show you how you can still enjoy pancakes without all of the added refined sugars and still have incredibly tasty pancakes that the kids will love!

When it comes to making the all important batter the easiest way to remember the amount of flour, eggs and milk that you need is to remember the 1, 2, 3 rule. 100g of flour, 2 eggs and 300mls semi skimmed milk or dairy free milk.

This is what I did...


Pancakes

Ingredients

Batter:

100g flour of your choice
2 eggs
300mls milk

Filling:

Bananas
Strawberries
Tomatoes
Mozzarella

Method

1 - Place the flour in a bowl and make a well in the middle

2 - Beat the eggs together and add the milk

3 - Gradually pour the egg, milk into the flour and whisk until you have a smooth batter

4 - Heat some oil in a frying pan or crepe pan and add the batter, one ladle at a time

5 - Once the batter is starting to lightly brown, flip and heat until thoroughly cooked

6 - Continue until all of the batter is used

7 - For the banana filling simply mash a banana with a fork, spoon on a layer of mashed banana and roll up the pancake

8 - For the strawberry filling, wash and slice the strawberries and line them in the centre of the pancake and roll

9 - For the savoury pancake do not flip the pancake as with the fruit ones. Remove the pan from the heat, place some slices of tomato on the top, sprinkle over some grated mozzarella and place under a high grill until the edges start to curl up and the mozzarella has melted. Roll the pizza pancake in half and sprinkle over some extra cheese to serve.
