24th January 2016 - 30th January 2016 - One Picture Everyday For One Year

Well, that is the first month of 2016 nearly over with! This month has really dragged, there has been so much going on!

This weeks has seen me having a vegan week, a sick day for the twins, a surprise in Joseph's lolly, a busy day in the garden for the Hubby and a lot of foodie pictures.

On Sunday the Hubby was busy on the gardens latest project. Yet more puppy proofing has been needed. As the weather has been so wet they have turned a lot of the lawn into mud. To make it easier he has sectioned off the first third of the garden and put fencing and made a gate so that they are just in one part and cannot make any more mess or destruction.

Tropical Quinoa Porridge

As it is National Breakfast Week I thought I would share with you a recipe that I love. Back in November 2014 I shared my Quinoa Porridge recipe. Since then I have been enjoying it but have slightly adapted the recipe and experimenting with new flavour combinations.

This has to be one of my favourite combinations. I love tropical fruits and how well they go together. They make a perfect start to the day!

What is a little different with this porridge is that I have added a tablespoon of coconut oil. You may wonder why I would oil to a porridge. But coconut oil is like no other oil, I love it! Yes it is mostly a saturated fat but it is one of the most healthiest saturated fats that there are. Your body can easily digest the coconut oil so it is an immediate energy source, which is perfect for the mornings!

Press'd - Your Handy Takeaway Coffee

I don't know about you, but I love coffee! But I will confess to being a bit of a coffee snob. After enjoying good quality coffee for a long time at home prepared in both a cafetiere and the coffee machine most instant coffees simply do not cut it! So when I was asked if I would like to try a way to enjoy good coffee, while on the go, I could not wait to see if it would live up to my coffee expectations.


Press'd is a brand new, pure Arabica concentrated coffee that comes in a handy squeezy tub. To make a full of flavour cup of coffee simply add a drop of Press'd to your cup of hot water and enjoy.

Press'd is made of 100% Arabica beans from Colombia and comes in three varieties, Colombian, Vanilla and Caramel. Both the Caramel and Vanilla ones are made with the Colombian blend and have been infused with natural flavours and contain no sugar or sweeteners. The Gruffalo Lunch - Favourite Television Programmes

When I was asked which television show was our favourites a lot sprang to mind. I always love it when The Great British Bake Off returns and I can bake along with them and the baking bug returns. When I asked the hubby he said that his favourite was Peaky Blinders which is another great show which I also loved!

I thought that I would ask the twins what their favourite programme was. As they are only 3 quite a few choices can out as you can imagine. But one that they certainly do love has to be The Gruffalo. I know that technically it is a film but for the twins it is on television so it counts!

With this in mind and after the twins asking for a Gruffalo lunch I thought that I would make them a Gruffalo lunch and combine it with a few results that have been given to me about the best show of 2015.

Recently Slotfruit asked 1600 people what their favourite show of 2015 was. From the data that they received they have listed the top 15 shows of 2015. I will admit that I was a bit surprised by some of the results but others I was not.

But before I tell you the results let me tell you all about the twins Gruffalo lunches...

Slimmerseeker Thursday Week 3

This week has seen my third weigh in to see if I am loosing weight and improving my health. I have noticed quite a few changes this week in how I am feeling towards food and what I am putting into my body.

Last week I bought Delicious Ella's new book and found so many delicious recipes. That is how this weeks meal plan began. After reading all of the health benefits from a cleaner way of eating I decided to give it a go for a week. This is something that I have wanted to try for a while and after reading the book it gave me the urge to go for it.

Today is day 4 of my clean, vegan diet and I am surprised to be able to say that I am loving it! I have never enjoyed each and every meal as I am at the moment. I actually look forward to breakfasts, they have become my favourite meal. I wait to have my breakfast until the children are at school then I sit in peace and quiet and enjoy! This week my Slimming World eating plan has been put on hold to see what my weigh in will be like on Monday. I know that avocados and nuts have a high syn content but I have been eating them as they contain "good" fats and are a part of a balanced vegan diet so I have been eating them, and enjoying them! How this will effect my weight loss is yet to be seen. But I am enjoying my food and feeling great and am not missing meat and processed foods at all!

Green Goodness Breakfast Bowl

As it is National Breakfast Week I thought that I would share with you my favourite breakfast. Recently I have begun to enjoy breakfast time more and more. My breakfast usually consists of a smoothie or muesli. But recently thanks to Deliciously Ella I have discovered how you can transform a smoothie into so much more by simply adding avocado!

My smoothies have done from a drink to something so much more filling and nourishing. My smoothies are now thicker and have more of a yogurt consistency. 

Today's recipe contains 4 different fruits, avocado, coconut milk, manuka honey, seeds and green matcha tea!

This is what I did...

Sweet Root Vegetables and Bean Soup

At this time of year I love to eat soups. They are not only a warming dish on a cold day but they are a healthy meal and also super cheap to make. When buying tinned soups in a shop you can pay anything from 65p up to £2 depending on the brand. If you are going to buy a fresh soup you can expect to pay up to £4, again, depending on the brand. Why spend that when you can make your own, with fresh ingredients and know exactly what has been put in it. No added nasties such as preservatives or ingredients that you do not know what they are.

When I went to Aldi to pick up a few ingredients I saw one of their stew packs of root vegetables for just £1.29 for 1.5kg of vegetables I knew that I had my ingredients for a deliciously, warming soup.

Freekeh Stuffed Peppers - #CookBlogShare Week 4

You may have noticed recently I have been enjoying more and more vegetarian meals and wanted to change one of my favourite dishes into a meat free version.

I love roasted peppers, especially red, yellow and orange ones. Roasting them transforms their flavours and I normally enjoy them stuffed with a minced beef sauce. Making it into a meat free dish was easy. Like with a lot of my other meat free favourites I simply substitute the meat with a grain or lentils. With this recipe I have used the grain, freekeh.

Freekeh is a fairly new grain to me. I have used it in the past a couple of times. Freekeh is a cereal food made from green wheat that is roasted. It is used in a lot of Arabic meals and originates from there. Freekeh contains up to three times more fibre and protein than brown rice and is low in calories! So not only does it have a delicious nutty flavour it is also very good for you! I must admit that I love this grain, it has a lot more flavour that rice and is so easy to add to meals. With this dish, it went perfectly!

CookBlogShare - The Vegan Round Up

This week I am having a super healthy week. This is something that I have wanted to do for a while now. We have been reducing the amount of meat we have been having in our meals, but this week I am having a meat free week. So seeing these recipes came at a perfect time!

Last week the CookBlogShare linky was hosted by Hayley at Snap Happy Bakes. There were bakes both sweet and savoury, along with breakfast, dinner and snack recipes shared. Weekly Meal Plan - Week Commencing 25th January 2015

This week my meal plan is going to be slightly different to normal. This week my meals are all going to be meat free and as clean as possible. This is something which we have been aiming for as a family. A cleaner way of living, eating fresh, good quality meat, fresh vegetables and natural ingredients.

After buying Ella Woodward's new book Deliciously Ella, Every Day I have found so many delicious recipes and so much inspiration. I also have her first book, Deliciously Ella and fell in love with the whole ethos that Ella has with food. But I will admit that is as far as it went. This week I am wanting to try having a Deliciously Ella week. I am going to have a go at eating just natural foods and meat free. I will add some fish for Friday.

I will still be cooking regular meals for everyone else when I know that it is something that they will not like. But I have a few ideas and ways to make a lot of them family friendly meals.

This week has been an exhausting week and a week that we are all pleased has ended better than it started.

This week has seen sleepless nights, worry, hospital visits, and relief!

Sunday 17th January 2016



Sunday started off as a relaxing day. We did a few jobs around the house, took the dogs for a walk and had a lovely Sunday dinner. That is until we got the phone call. At 9:45pm we had a call telling us that the hubby's dad had been rushed into hospital. So we rushed over to support his mum and see how he was which resulted in us being there until 2:30am. By the time we got home it was 3am and by then we had got past tired. In the end it was about 4am when we got to sleep and were then up as normal the following day!

Chicken, Lemon and Thyme Pasta - Nudo Adopt

You may remember, before Christmas I wrote a post about Nudo Adopt's Panettone. Since then I have been trying some of their flavour infused oils in my cooking.


In the past I have used infused oils before but I will admit that I have not tried any like Nudo Adopt oils. So far I have only tried one of the oils but I am so impressed with it I simply cannot wait to tell you about the others! I am planning to create other recipes using the other oils which I will be sure to share with you. But I had to tell you about the oil that I have tried.


The first oil that I tried was Nudo Olio D'Oliva Extra Vergine Al Limone, Extra Virgin Olive Oil Stone Ground with Lemons. In the past, other infused oils that I have tried had an aroma of the infused flavour but the taste simply did not linger throughout cooking. As soon as I started to heat up Nudo Adopt's oil the aromas of lemon filled the air. As I began cooking the chicken in the oil the aromas of chicken and lemon combined together perfectly. As soon as the chicken was cooked, I could not wait to try a piece and I was amazed that the flavour had soaked into the chicken. I have never used an infused oil that has added so much flavour to a dish.

Slimmerseeker Thursday - Week 2

This is now my third week following my Slimmerseeker plan. My regime is to follow the Slimming World eating plan, listening to my Thinking Slimmer Slimpod and exercising daily. My exercise is a combination of the 30 Day Shred with Jillian Michaels and regular keep fit classes and walking more. My goal is to feel confident with my body when we go on holiday in August.

Before I tell you about my week I would like to say a big thank you to the people who joined in with the first week of the Slimmerseeker linky.

Pempi's Palace shared a great food planner that she uses. It is a great way to record what food you eat and the amount of water that you drink. I know that I need to use a water chart as I certainly need to increase my water intake.

This led perfectly onto Lucy Locket Loves post about the 4 Week Water Challenge that is to raise money for Water Aid. For every £1 that is donated the government will match it until 10th February. Again this has made me think about my water intake and how lucky we are!

Mrs Shilts shared a delicious Butternut Squash recipe. Butternut squash is such a versatile vegetable that is perfect for soup. You can add a variety of spices and herbs and can be changed in so many different ways and flavours. But best of all it is a syn free soup! Yay!

Madhouse Family Reviews shared how after Christmas she was finding it hard to get back on track. But I am sure that everything will get back on plan. I always struggle after Christmas especially when there are treats around! I hope to see that the Slimpod has helped this week!

Spice Up Your Life with Gousto

Throughout January Gousto are challenging you to spice up your meals by trying their delicious recipe boxes. Forget eating bland, boring salads have a meal that gives you a kick of flavour and spices. Each week they have been featuring a different spice in their meals. Last week their specially chosen spice was sumac. If spices are used in the right quantities they can change a meal in an instant. 

I have tried and loved the Gousto meal boxes in the past. We received a box to review back in 2014 and we were impressed with both the originality of the recipes and the quality of the organic ingredients. The picture below shows you just one of the lovely meals

Lemon Courgetti with Grilled Tuna

As always January is the healthy eating month. However this year I am wanting to make this a permanent change.

So when Aldi asked if I would like to cook up a healthy meal I had a good idea of what I would make. Last year we bought a spiraliser and I really want to start using it more this year. Aldi always have a lot of lovely fresh fruit and vegetables in store so I knew that they would play a big part in the meal. I decided to go with fish to accompany the vegetables.

CookBlogShare - The Indulgent Round Up

Oh my! This week could only be the indulgent round up. There were so many recipes that had me craving a sweet treat! The only problem that I had was selecting which recipes to include.

Before I go on and highlight my favourite recipes let me thank Mandy at Sneaky Veg for hosting the CookBlogShare linky party last week. It was lovely see a great mixture of regulars and new blogs joining in.

Weekly Meal Plan - Week Commencing 18th January 2016

Last weeks meal plan was mostly a success. I say mostly because one meal was slightly adapted while another just didn't work out as planned. However I will not be defeated, I will try again and will be more successful!! So keep an eye out for more bean burgers in my meal plan, next time they will be perfect, I hope!

Last weeks healthy meal plan was a success and we are definitely going to be keeping up with it! I can tell in both my weight loss and how I feel the benefits of a cleaner, healthier diet.

This week are starting the week with a treat, then continuing with our healthy plan. As well as healthier main meals I am also eating healthier breakfasts and lunches and have just invested in a new blender for juices and soups so I am sure that there will be some recipes coming soon.

Slimmerseeker Thursday - Week 1

Yay, week one has been completed!

The first week of the diet has been a great success! If you did not see last week post about why I am wanting to loose weigh, what my motivation is and how I plan to do it you can see it all in my first Slimmerseeker post.

When I finished writing this post, I went to link up with the support linkys that I used to join in with only to find that they had stopped. When I was slimming last year I found these groups to be a great support and encouragement. So I was disappointed to see that they had ended. So this gave me an idea to make Slimmerseeker Thursday into a linky where you can join in and share your weight loss journey posts, fitness posts and of course your healthy recipes that will help and inspire others. I really do hope that this new linky is a success and we can all help each other on this difficult path to self contentment.

Anyway, let me carry on telling you about my week.

Before I tell you my weigh in results, let me tell you a bit about my week. I am going to be totally honest with how I am getting on and how my weeks are going. If I have a hard time, I will tell you. Weight loss and transforming your body is not easy and I cannot stand it when people make out that it is. For normal people it is hard work and I want to show you a true picture of how it is.

Vale of Mowbray have been baking and brewing food for over two centuries, but over the last 86 years they have stopped brewing to achieve the perfect bake.

Natural - Parragon Book Buddy Review and Recipe

Being a Parragon Book Buddy means that I get to try and discover lots of new and exciting cookbooks. This month I am thrilled with the book that I am going to tell you about today. This book has become my new favourite book. That book is Natural - Wholesome Recipes for Pure Nourishment.


In our house we love books and I particularly love cookbooks. I really appreciate a good, quality book and Natural really is a pleasure to have. This book has been made with the highest quality materials and is a lovely book to hold, that a feeling that you simply cannot get online.


The first chapter of this book introduces you to "The Natural Way" of eating. This is a way of eating that we, as a family, are passionate about. The opening paragraph of this book sums our beliefs completely...

"Fresh, natural and simple ingredients play an important role in eating well and encourage a clean and health-giving approach to everyday eating. Incorporating more nutrient-dense foods and less processed ones into your diet will also help to boost, balance and benefit your overall health and happiness."

For a while now we have been trying to cut out as many processed foods from our diet as possible. The majority of our meals are all cooked from scratch, except from when I want the odd night off and we buy pre prepared food.

If you want to eat cleaner then Natural is a fantastic book for both people who want to start eating clean as well as families like us who do try to eat clean. It is full of ideas for breakfasts, energy fuelling lunches, snacks and sides, dressings, sauces and dips, a feast of vegetable based mains, power packed protein mains, sweet treats and healthy nectar's.

So when it came to giving you an example of one recipe, I struggled which one to choose. There are so many recipes that I have simply got to make. But I did select a recipe, and I chose the Slow Cooked Beef with Smashed Butter Beans.


I have chosen this recipe to show you that eating clean is not as some people imagine. It is not just about vegetables, seeds, lentils and superfoods. It is simply about cooking from scratch using fresh ingredients and creating a deliciously flavoursome meal. I have added a  few extra vegetables for added goodness as I find that my children like their vegetables in the sauce and I made a couple of changes to adapt it to our taste.

This is what I did...

Slow Cooked Beef with Mashed Butter Bean and Potatoes

Ingredients

Slow Cooked Beef

2tbsp olive oil
1.6kg beef brisket
2 red onions, quartered and sliced
3 carrots, quartered and chopped
6 baby parsnips, quartered and chopped
6 baby turnips, quartered and chopped
1 tin 400g x chopped tomatoes
800mls beef stock
2tsp Worcester sauce
Salt and pepper - optional

Smashed Butter Beans

750g potatoes, chopped with skins on
1 x 400g tinned butter beans, drained and rinsed

Method

1 - In a large pan or oven top casserole dish brown off the meat and place on one side

2 - Heat 2 tablespoons of olive oil (or a few good sprays of spray oil) in the pan and once heated add the onions and cook until starting too soften

3 - Add the carrots, parsnips and turnips to the pan and cook over a medium heat for 5 minutes, stirring often

4 - Add the chopped tomatoes, Worcester sauce and seasoning. Stir thoroughly

5 - Return the meat to the pan and pour over the stock

6 - Reduce the heat to low, cover the pan making sure that a little steam is able to escape

7 - Cook on a low heat for 4 hours to 4 hours and 30 minutes stirring every so often to stop the ingredients sticking to the base.

8 - For the potato and butter bean mash simply place the potatoes and beans in a pan of boiling water and leave to simmer for about 20 minutes or until soft enough to mash

9 - Drain and mash


Serve the beef with the potato and butter bean mash and add some green vegetables on the side.



As the meet has been slowly cooked for over 4 hours you will not need to slice the meat, it will be so tender that it will fall to pieces!

It is a truly scrumptious meal, that will keep your family asking for more!

Lavazza Coffee - Post Workout Boost Smoothie

For me, coffee is an essential part of the day. When I drink coffee I will admit to being quite fussy. I very rarely drink a regular instant coffee. When I have a coffee I like to have a top quality drink. So when Lavazza asked me if I would like to try some of their blended coffee I jumped at the chance!

Lavazza is a top quality Italian coffee which has been running for 120 years. In 2015 they celebrated their 120th anniversary by releasing a some limited edition coffee tins which contain their specially selected 100% Arabica ground coffee, which I received to try. The collection consists of three tins, each decorated with a unique design and anniversary logo.


Since 1985, when Lavazza was born, they have been thoroughly committed to developing the art of blending and roasting. They have searched and found perfect flavour and excellent quality.

I hope that now we have finished the first week back after Christmas you all feel like you are back in to your routine. I always find the first week the hardest, but I am always pleased to have that routine back in our weeks.

Today I am sharing my four favourite recipes from last weeks CookBlogShare linky. It was lovely to see so many regulars back as well as some new blogs which I sincerely hope to see more of.

This week, as I am back on Slimming World, the healthy recipes certainly stood out. After the over indulgence of Christmas and new year I crave a lot of goodness throughout January. Weekly Meal Plan - Week Commencing 11th January 2016

Last weeks meal plan was a huge success and a great way to start the year!

I have now completed my first week on Slimming World and I am loving it! On Wednesday something just clicked and I found a hidden determination that I did not know was there. Today is weigh in day so I have my fingers, toes and everything crossed for a loss. I have been so good and feel so good about how I have done this week I do not know what I will do if I haven't. But I will be keeping you up to date with how I am getting on in my Slimmerseeker posts every Thursday.

Last week I shared a variety of healthy recipes and have got plenty more planned. But this is what I shared last week...




Back to this weeks meal plan. This week I have been looking through various healthy cook books for inspiration. I have had a lovely evening just sat looking at delicious, healthy meals and have got so many ideas. I cannot wait to start cooking them up!

Monday - Creamy Vegetables with Spelt Noodles

While we were out shopping on Sunday we discovered some spelt noodles and picked them straight up! Today we will be trying the noodles with vegetables in a creamy fat free yogurt sauce. If this is a success I am planning to share it!

Tuesday - Slow Cooked Beef

This is a recipe that is out of a delicious new book which I have been reviewing. This is a recipe which I cannot wait to try and obviously I will be featuring it in my review post.

Wednesday - Turkish Lamb Bulgur

This week I am reviewing a Gousto recipe box. This month their focus is on spices. On Wednesday I will be making one of the meals from the box and I will be telling you how I get on next week!

Thursday - Bean Burgers

This week I will be having a go at making bean burgers instead of beef burgers. I am planning to make them in the same way but by replacing the meat with beans. The children and hubby will have theirs with burger buns but I won't!

Friday - Fish Friday

At the moment I am not sure what fish dish I will be making but it will be fish.

1st January - 9th January 2016 - One Picture Everyday For One Year

A new year and I have decided to complete another year in pictures. I have now completed two years of 'One Picture Everyday For One Year' and I have found that it is such a lovely record of our year. It is only when you look back over the year you realise how much the children have changed and grown and how much you have packed into your time. So, for me, I always knew that I would go for another year. This year is a leap year so I will have a Project366!

We have an exciting year ahead and I cannot wait to share it all with you.

Around Christmas time I decided to take part in the Sky Blanket project which was thought up by Aly from BugBirdBeeThe Boy and Me and You Little Sew and Sew. As soon as I heard about it I knew it would be a project which I would love to take part in. Each day I will be crocheting a line (it did start off as a square a day, hence the picture above) a day using a colour that has been inspired by the colours in the sky that day. This project has made me slightly obsessed with the sky and yarn which is a colour that could be seen in the sky! As soon as the new year started I could not wait to get going on my blanket!

The new year started with a cold which really start to get me down on Saturday. Saturday was always going to be a hard day as it was my late Grandad's birthday. Saturday was all about Olbas Oil, hot lemon drinks and Soothers!

Sunday was a chill out day. We did not go far and I spent the majority of the day in my cosy sock, curled up on the settee doing crochet. I really did not feel well.

Monday 4th January 2016




Monday was the start of my slimming plans. I started on Slimming World again. I was still not feeling well so did not do a lot apart from being with the children. Next month we will have had our dogs for a year. When they were stood looking out of the window I was amazed by how much they have grown. They are no longer the tiny little puppies that we bought home.

Tuesday 5th January 2016



The children returned to school on Tuesday and I was feeling more myself. I changed my Sky Blanket idea from squares to a lined blanket. I am a lot happier with it and am looking forward to trying and learning new stitches and techniques.

Wednesday 6th January 2016



On Wednesday I completed day 2 of the 30 Day Shred fitness plan. This year I am seeking the slimmer me and will be posting each week how I get on with my weight loss. I will be ready to get into a swimsuit in the summer. You can see how I get on in my Slimmerseeker post.

Thursday 7th January 2016



After a very grey start to my Sky Blanket I was delighted to see this beautiful sun set. Since starting I am always looking up for colours. I have even got the children looking and pointing out the colours that they see.

Friday 8th January 2016



Before my diet started, Friday night was always cheese and wine night for the hubby and I. This week I loved my Friday night treat. This huge bowl of meringue nests, fruit salad and fat free yogurt only contained 5 syns for the 2 meringues. I was even able to enjoy a gin and syn free tonic and still not reach my maximum syn allowance! I was over the moon with how Friday went.

Saturday 9th January 2016



Saturday was a busy day. We started the day off with Isabella's ballet class. We then needed to go with Joseph to collect our new glasses, which I am really pleased with. Along with the healthy eating I am enjoying fresh fruit smoothies. I made this delicious smoothie on Saturday.
